      The Freakin Rican Restaurant Love this recipe. I make it every year for my family in the holidays and they love it. I wanna know how do you reheat the arroz con Gandules? I put in an aluminum pan after I cook it.

    Recipe:
    16 oz gandulez (pigeon peas)
    1/3 cup canola oil
    Quarter pound salted pork
    Quarter pound of cooking ham
    2 tablespoons of sofrito
    One envolope of sazon
    1/2 teaspoon or oregano
    1/2 teaspoon of cumin
    1 1/2 teaspoon of salt
    1/4 teaspoon of ground black pepper
    1/4 cup of tomato sauce
    3 cups of rice
    3 cups of water
    2-3 bay leaves
    1/4 cup sliced spanish olives

    This recipe is PERFECT!! My boyfriend is Puerto Rican and he thought it was exquisite. A few recommendations for people like me who enjoy a good shortcut:
    Gandules - if you are using canned gandules, there's no need to heat them up beforehand or add extra water. Just pour one can in at the same time the chef in the video adds his gandules (including the water that's in the can) and you'll be fine.
    Sofrito - I used the pre-made tomato based sofrito by Goya and it turned out great. I also still added the tomato sauce as directed in this recipe.
    Banana leaves - I wasn't able to find these, and it came out just fine without

    WARNING: If you use canned gandules and/or store-bought sofrito like I did, you will need to decrease the amount of salt you use!

    Hi. Just wanted you to know that I had this dish at a friends home who's Puerto Rican. His mom made the dish and it was fabulous. I've asked for the recipe for a couple of weeks and I never got it from her. Saw your video and made it exactly the way you did. Even down to the making a hill at the end. Let me just say that it was 50 times better then my friends Mom's dish. I made it for a Cleveland browns football party today and it was the hit of all the dishes. Thank you so much. Maybe you can help with the browns winning a game now.

      I lived in Chicago right next to Puerto Ricans family they would make this dish every day I would beg for a bowl they used a sausage but I don’t know what kind I saw this recipe and it’s been like 50 yrs but I’m

      I'm in my 50's and my mother is the last of the Mohican's when it comes to the traditional foods. If my sister and I and maybe for a few of my cousin's don't pass it onward our traditional Puerto Rican foods die with us. It's so sad.

    I'm part Mexican & Idk if it is just older Mexicans don't like to share their recipes,but I found the same kind of behavior with PR women with their recipes also. I've had to learn how to cook without their damn recipes. I can cook both Mexican & PR food. I really like your recipes. Thank you for sharing your recipes.     I went shopping and I'm Puerto Rican but I never felt so happy shopping food that's on your recipes. My mom would be upset but truth is I just felt so happy my refrigerator is full of food I haven't made in a very long time with new ingredients thanks to you 😍💋

    This is the ABSOLUTE best Arroz con gandules I have ever tasted. The only tip is to be careful with salt. I cut back on the added salt significantly and rinsed the olives and gandules. Thank you for the recipe.

      If I'm not mistaken, he accidentally said one portion of salt in one part of the video, and another portion later in the video. I agree...it was too much salt (ask me how I know😅) I love this recipe, bit put the brakes on the salt. Thanks Freakin' Rican, for this recipe!

    This right here, this recipe, is the national championship food of Puerto Rico! Awesomeness! I rocked it perfectly the first time. Now I need some pernil and tostones and maduros and some beans and some pasteles............ ;) This rice is a meal all on its own and is fabulous. Thank you again and God bless.

    THANK YOU FOR THIS RECIPE!! I FOLLOWED THE RECIPE BUT OMITTED THE SALT PORK AND HAM AND IT CAM E OUT AMAZING. I MADE THE MISTAKE OF ADDING ONLY HALF A CUP OF WATER TO GANDULES BUT NO DAMAGE DONE. I SERVED THIS WITH A PERNIL AND MY DAUGHTER AND I LOVED IT. WE BOTH AGREED IT WAS THE BEST RICE I EVER MADE. I AM NOW COOKING LIKE A FREAKIN RICAN - BUEN PROVECHO!!

    Since my father could not always find banana leaves, he would use half of a damp paper bag instead to cover the rice. Same concept just an easy solution when you are without. Thank you for the recipe, I look forward to making it myself.

      When you can't find banana leaves you can boil a green plantain in water and use it without the platano to cook the rice. My mom did that.

    In the early 1990s, I went to school with a lady who made this dish for an eating meeting function. It was one of the best flavored rice dishes I had ever tasted. I spoke about this dish many times. No one I asked had an idea of the name, much less a recipe. I found your video (2017) and made it. Delicious! This was better than how I remembered the original tasting.

    Just discovered your channel and followed your directions for roast pork. My kitchen smells wonderful. My husband is from Puerto Rico and lives in Canada with me. My MIL taught me how to make rice and beans, same ingredients, except different method. I am enjoying your cooking technique for the Rice & Beans, however, I am using Pink Beans. I do not have banana leaves but will be searching for some soon. Looking forward to your next video. Sandie

I finally got the confidence to make your sofrito recipe as well as arroz con gandules!!!     Dude, omg! when you made that little mound with the rice it reminded me sooo much of the Moms, she always did that with her rice too, now you schooled me on the banana leaves with the rice, i bet the banana leaves be killin' the arroz con gandules with Sabor Mmmm! it looks good.     Awesome recipe!! Just a heads up bro, get rid of that cutting board, it dulls your knife with every pass you make, that's why it looks like your knives struggle to cut through things. Wood or plastic...is the only way to go.

      The Traveler That’s why you replace the cutting board very so often. The marble on is beautiful but it does mess up you knives. This recipe is AWESOME!

      I believe ya. I was looking up which nations ate the most fish a few days ago thinking it was Japan. You guys were #1 fish eaters worldwide. Japan came in 3rd.

    Wow!! My mother use to make a mountain with the rice also, and I myself do the same thing.
    My mother passed away 30 years ago and you bring me so much good memories of how she use to cook.

      The mountain thing helps the rice cook evenly. Only thing is you missing the right pot... But looks yummy :-)

      +Adelita Rivera In some tropical Islands you need to wash the rice that if you getting it local cause it has all kinds of stuff in it, but if you are in the States there no need to wash the rice, matter of fact! if you wash the rice you washing off the vitamins and nutrients.

      +robert castello I know when you wash it you washing away the nutrients but to me the rice taste dif if you don't. I don't need to be getting any nutrients from my rice I get them from other foods.

    Thanks for this. I was told that I wasn’t PR enough cuz I didn’t like mom’s ACG. (100% though). At a family reunion, my aunt said mom wasn’t a good cook. I could either drive 250 miles to watch my aunt or watch this video. My German hubby likes my PR ACG now.

      @@orlandovictory I used a paella pan I got from Spain and it came out perfectly. I usually use a caldero but will not in the future for this recipe.

    Have you tried making it with achiote oil.

      I used about a 1/3 cup achiote oil that I made and I also added 1/2 tablespoon of tumeric powder and 1 packet of Goya Sazon/ azafran ( saffron)! Not sure if it’s the correct way but it has a great flavor and beautiful color without being crazy salty! :)

      Jessica Arango you can use canned guandules. I use long grain rice. I am not a fan of medium grain cause the amount of water needed changes and I end up with mushy rice sometimes.

      Typically, in this dish medium grain rice is used. However, I have used long as well. But I totally loved the consistency of the medium grain. It taste way better to me..

    Never thought of adding banana leaf to cooking arroz con gandules. I bet that brings the flavor of the island out even more! Great idea!

    I usually heat my light olive oil with cumin seeds then sauté
    my chopped colorful peppers and onions and garlic then add my sofrito sauté that adding dry oregano and Badía sazón no msg. I add my gandules cook that then in my rice cooker I pour my gandules with the water and sauté sofrito and add the rice mix well. Taste for salt. I don't add tomato sauce. Then cover rice cooker with glass lid let cook till dry. I chop fine cilantro and add to dry rice mix well and cover again let cook in rice cooker. That's how I cook my rice/ gandules kosher style!

      Plastic is what's up to health code for cooking. Wood will harvest bacteria. Plastic you can use bleach on to kill salmonella.

      The banana add a delicious flavor to the rice. My grandma use them too, this is a tradition. Yummy!

      If you don’t use banana leaves there’s no harm done, but the leaves do enhance the flavor!

    I’ve made this recipe twice. Perfect both times! Finally found my go-to recipe. I just lessen the salt to 1 Tbs and used canned gandules.
