omg i made this and it tastes sooo goood!!!! this is the only one dessert that i got right.... i used agar agar instead of gelatin and topped it with roasted pineapples ad peaches with a hint of strawberries... absolutely completely loved it thank you john!!

As an Italian,It makes me smile to know that it is considered "fancy" because here it is a bit like tiramisu, which is considered the dessert of the incompetent in the kitchen. I love pannacotta and I always had problems with it, i boiled (literally) both milk and heavy cream together and the fat of both liquids would separate. Now I see what I was doing wrong. I’m def gonna try this new approach.
Covid Cotta is what my kids call it now. I've only ever had this in a restaurant and I decided to make it for our family lockdown valentines dinner dessert and it was amazing, restaurant like. My husband is still in shock that I actually made it! Thanks John.
I found a recipe in a "holidays" library book once. I think they called it Bergamot Cream. But based on seeing this recipe, I would say it's probably a Panna Cotta. It calls for heating milk (or half and half) with Earl grey tea bags while blooming gelatin in heavy cream; about half of each. Then you remove the tea bags, and add the cream/gelatin to the hot milk, along with some sweetener. Cook till the gelatin is dissolved and pour into dishes similar to what you used. Chill and serve. 😋

Never had panna cotta before but I want to now. Just a few days ago I saw someone on Chopped make a lemon Posset. After looking that up I'm going to make that as well. Roasted strawberries? Who knew? That looks so delicious John. I love the look of the seeds too John. I only use my vanilla bean paste when I make a custard. Like you I never leave any of those seeds behind. I grab my little rubber spatula and scrape till all of them are out, lol. Thanks for the recipe and for teaching me something new (roasted strawberries)... 😋

I added earl grey to my panna cotta and I topped it off with a blueberry pecan compote, turned out heavenly!
