I had my gastric bypass in 2001, and when preparing for it one of my doctors at the time told me something I never forgot - "Your stomach has no idea what time it is, why you are eating cereal for dinner or having Chinese food at 2 am. Your stomach has no concept of time and doesn't care when or what you eat." And it's totally true of course. Now as you get older, naturally what you eat may not necessarily agree with your stomach but that's different than what the doctor was trying to get across. This idea you can't eat this or that at specific times of the day is ridiculous. The whole concept of "breakfast for dinner" is backwards since the stomach doesn't care about time but it's a great idea nonetheless isn't it? :)

It seems like other parts of the world are hung up on only having certain foods at specific meals, while we tend to be happy to have whatever we like, whenever we like. Why should a food ONLY be for breakfast or dinner?

    • @bobbiejojackson9448
      @bobbiejojackson9448 4 місяці тому +6

The only problem for James and Millie is that the UK doesn't have sausage like our breakfast sausage. Their sausage has different spices (kinda heavy on the cloves and not enough sage) that makes it less than perfect for making true sausage gravy. Their best bet is to find a recipe online for American breakfast sausage and make it themselves at home. It's really not as hard as it might sound, as long as you can get bulk ground pork and some common herbs and spices. When making sausage gravy, everyone that I know, uses bulk ground sausage and not the links anyway.

a good sausage gravy starts with browning the sausage, then remove the sausage and keep sausage grease in the pan. then add any seasonings, heavy cream, flour, and anything else to taste. (black pepper is very common) keep stirring it while slowing adding the flour until it's a rich creamy color and slightly watery. (it'll thicken up quickly).

It also depends on the person and their biscuits.
Like my mom's home made biscuits are so amazing bo butter is needed and they're so fluffy that no need to cut them in half. I just dump a good pile of gravy on top of them. I'm glad I learned how to make my mom's biscuits.
As for the gravy for me it all depends if it does or doesn't have sausage in it. If it does I tone down the salt and pepper. If it doesn't I may add more salt and pepper to taste. To me too much pepper and salt actually ruins the taste. Believe me because I've known some people to have dumped their normal amount of salt and pepper in the gravy while cooking it but when it came to eating it I wass un-edible for me after the first bite.

sorry if anyone has already commented this: biscuits and gravy would have been enjoyed at like 5:30 am before getting out to tend the fields and animals of small farms originally. Of course very few of us live that kind of life these days and don't blame you for thinking it's pretty heavy and hearty for a breakfast food...this was by design to fuel hard-working farmers in the fields, and would have helped stretch sausage further. sausage itself being a way to use the odds and ends kept after the primal cuts of the hog would have been used or sold for income with additional salt as preservative. I like to think, if the pig had a name from being lovingly fed and tended, you would try to extend the meat by creating dishes such as this! :D the gravy is a way of creating something from the grease that renders out of the sausage rather than wasting it. You can also make biscuits in the morning as they don't require proofing/rising like bread.

You may know, but a little background.
if you look at the southern foods - Especially like grits and Biscuits and gravy, they have a history.
Many in the south worked in agriculture or other very labor intensive jobs and we not wealthy.
    If you look at it:
    Biscuits - Flour, butter, milk . . .
Gravy - Flour, milk (and maybe some sausage, pepper, sage, bacon).
Would be inexpensive yet warm, filling and calories to get you from 5am to noon time.

I really like to eat biscuits and gravy with bacon and scrambled eggs. In high school, we ate a lot of French fries and gravy. French fries or Frito corn chips are good with Wolf Brand chilli, shredded cheese, and pickled jalapeno slices. You need them pickled/ canned, so they'll be soft enough to eat.

the thing about grits is, that whenever it has a topping like cheese or hot sauce, you have to mix the toppings into it a bit while it's still piping hot, otherwise the toppings will run out before you even finish the grits and then you end up with a lot of just plain grits at the bottom of the bowl.

Let's start with this.... Americans can eat and do eat breakfast food for supper supper food for breakfast. You eat what you want to you're not going to be judged for it. I wouldn't have survived college we're not not for leftover pizza that I ate for breakfast.
Breakfast in America Mary from person to person. There is no such thing as an American breakfast. You're going to have for breakfast and option of some kind of pork bacon ham or sausage, eggs cooked however you like them including omelettes scrambled fried. The only thing I don't usually see is poached not many people eat poached eggs and the us. You're going to have some kind of bread or toast if I'm getting waffles or pancakes I don't usually order any kind of bread to go with my breakfast. And then you have options of sides. Some people like sliced tomatoes some people like fruit, others want hash browns or grits. We just believe if it's there and we think it up will try it
As far as southern breakfast goes, 1 traditional gravy has some sausage bits or in it or it was cooked with some sausage or bacon grease to give it a little flavoring. My son's a vegetarian so he makes his white gravy without any kind of meat product. He just seasons it with salt and pepper.
Try different foods 1 different ways and decide what you like. Don't let society dictate it to you.
By the way many people's favorite time to eat breakfast is late at night after they've been out with their friends or they've come home from a ball game or that's one of the things about living in America that makes it worth surviving hurricanes and tornadoes LOL.

Put some butter right in the middle of your grits. Some people even sprinkle it with sugar. It is basically boiled coarse ground corn. You can almost make it taste like liquid buttered popcorn. That's why it tastes so good with cheese. We don't have any problem with spreading that gravy right into our scrambled eggs or over the top of hash browned potatoes. It's almost like a universal breakfast topping.

My babies started on grits as soon as they could eat solid foods, instead of baby pablum. They loved them then and still do as middle age adults. In fact, my son asked me to cook him some cheese grits with scrambled eggs and bacon for his 35th birthday some years back. Even Northerners can cook some grits like a Southerner. It's perfect in the morning before shoveling deep snow. Or when you're thinking about going outside to shovel snow. Or pouring another cup of coffee and watching the neighbors shovel snow.

Biscuits and Gravy uses breakfast sausage which is different from other types of sausage. It's actually super simple to make at home. Just fry the sausage in a pan, don't drain the grease, and then add milk. Mix in some black pepper. Heat and stir until you get your preferred consistency.

My mom made biscuits and gravy with either sausage or bacon. You just take the drippings after frying the meat, and add butter or oil and flour and make a rue, adding salt and pepper, then stir in milk and then when bubbling, add a little flour until it’s the right thickness

That gravy isn't just for breakfast. Growing up my mom would make it with fried chicken or pork chops and we would put it over fried potatoes. She would make it from the grease and crispy bits left over after frying the meat. You can literally make it from any animal fat left from frying something, even just butter in a pan add flower then salt and pepper to taste and add milk when the flower browns to your liking (AVOID BURNING THE FLOWER AT ALL COSTS). It won't thicken till it boils and I suggest whisking or stirring well until then, but not vigorously.

My nephew was a cook in the Army in Iraq during Operation Iraqi Freedom. He came home with several recipes that his future wife and kids would come to love, one of them being sausage gravy over biscuits. His kids beg for it any time of day. All three of the kids can now prepare it as well as their dad. They are 15, 13 and 10, and extremely comfortable in the kitchen. BTW, in birth order, they are boy, boy and girl.
We love it any time of day, too. I loved making it when I was able, but now I've talked the hubs through preparing it a few times and it's something he's become comfortable with, too. I like my sausage gravy fairly peppery, but hubs prefers it less so. It used to be the other way around but he's bothered now by reflux and things just don't go down so easily for him now.
For the record, we have what we call breakfast burritos one or two times a month. We enjoy them a lot, but of course, they do take a bit more prep than just frying an egg and putting a couple of slice of bread in the toaster. :) We brown a bit of loose sausage, adding chili powder and cumin and some oregano to spice it up a bit more "Mexican," and then set it aside while scrambling a few eggs after sauteing an onion and a bit of green peppers, again seasoning up the egg/veg mixture. Then we load it onto a tortilla with cheese and a bit of salsa and sour cream and voila! :)
