the best food is everyday food. i do rabe similarly but instead of steam and saute, i saute first in a deeper pan and then quench/deglaze with a sweet riesling or something similar, optional but it adds a touch of acid and sweetness and completes cooking with an intense burst of steam. i finish with toasted pine nuts and usually serve tossed with pasta and pecorino. your variation looks great, but big takeaway for me is your twice-cooked whole lightly browned garlic cloves, very wine-friendly and will probably make it into my next prep of a number of things. thank you for all your work making these excellent videos

Around Philly we steam the rabe first, then drain the steamed rabe and drink the delicious, healthy water. We sautee the garlic until slightly brown, then add the drained rabe, and sautee it in olive oi at high heat . This way we're not throwing out any water or olive oil, and the rabe itself is actually sauteed, rather than steamed. Also top with Locatelli if desired. Rabe and locatelli on a philly roll is a great meatless meal.

I cook the same way using the whole garlic, and I hardly bother with measurements. I feel like it's much harder to burn the garlic that way and more flavorful. Thanks, I subbed!

Thanks! I change up every now and then, but for veggies like this I prefer the whole garlic cloves. Appreciate the sub.

i make this all the time, i myself remove the leaves, and put a pot of water on the stove and once it is boiling i place the rabe in the water, it should stop boiling. then once you see the water is boiling again (5 min) i remove the rabe and it is cooked perfectly. then i sautee. i will make nice chicken cutlet sandwiches with ricotta and rabe on top and yummy

I'm a big fan of broccoli robe. Just a note of inspiration I got from watching ur vid. Try starting out with chicken fat with this meal. Never tried it but...with this recipe it should complement this dish.
Also, I trim the the stalks and cook them first as a head start, then add the florets so they cook evenly.

    • @SipandFeast
