This! I remember being with a Chinese friend at his Chinese relative's house and the roasting during Mario Kart was peak savage! It was all good-natured but hilarious too. Then we sat down for some incredible food.

What makes Uncle Roger the best in terms of being a food critique is that he doesn’t judge the food only by its taste and appearance but he really knows how it should be made and why it should be made like that. He delves deep in the fundamentals of cooking and the history of the dish being created.
Most food critiques just base their judgment on the final product and ignores the step by step procedure that’s why they’re not that entertaining like Uncle Roger.
He's also a comedian, probably why he's more entertaining
Critics critique. Critic is the noun, critique is the verb.

Feels like this is the most genuine/authentic that Joshua has cooked. While not a COOK, Uncle Roger knows his cuisine, and comedically was still able to challenge Joshua.

Everytime I watch asian recipes I can't stop thinking how elaborate they are.
In Italy you cook pasta, cook tomato sauce, mix, add parmesan and that's it you're fed and happy.
Meanwhile in Asia you have like 54 ingredients, at least 20 cooking stages, 10 mixing stages, at least 15 spices and have to cook outside to not make your house smell fishy for the end of time.
No wonder Italians are bosses in waste management 😜

Most asian dishes that I’ve seen are actually pretty simple and straightforward. But yeah, Italian cuisine does seem to use minimal ingredients
I mean. If you get it totally store bought, yeah. But have you ever tried making your own pasta and sauce, totally (or at least mostly) from scratch?
It's a process, but it's very, very rewarding. For a beginner, I'd say a Romesco sauce is easiest to get right. If you have a food processor and can "fire roast" red peppers in the broil setting in your oven (don't come at me, I don't have a grill 😢), you can make an amazing red sauce. I recommend using *salsa style* fire roasted canned tomatoes. A good brand can add some really easy flavor.

This is actually a pretty common technique for most established chefs. They taste their food as they go to make sure it's good. Rather than finding out in the end as a surprise that it's too salty or sour etc
