Considering how long it must have taken to prepare all those dishes and taste and review and shoot for video... my single biggest take away was: These three must've enjoyed each others company enough to hang out together that long.
MSG needs to be cooked to make a major difference. I was investigating Korean cooking and I read somewhere that MSG needs to be simmered (I was looking at stews and saucy meals) for at least 5 mins for the flavour to develop and then I found that stir fries are done at a high heat so a few mins in the wok is enough to accomplish the same. I knew that the foods where the MSG was sprinkled on after cooking would not rate at all. Really enjoyed the video. I always add MSG to my bolognese sauce (not a traditional Italian recipe, a bastardised version popular in Ireland and England) and it has made it amazing where before it was just great (this is according to my husband so he may be a little biased)
There's no reason why MSG should be simmered. It's a salt that'll dissolve in water. Sprinkling on top is probably not as good, simply because it doesn't dissolve, but it'll still dissolve on your palate.
The sheer amount of dishes made here is astounding, let alone filming, editing, and making content out of it. Hats off to everyone involved in putting this together

This colab was the best colab ever. The crossing personalities with joshua's editting style was interesting. Having all three cooks doing their narration style over the cooking shots was stupendous. A++++

We really do not realise how much work it takes to make a video like this. The length and tempo are so perfect it’s easy to watch at once even though rolling must have taken hours. “Do not try this at home unless you are unemployed” is the truth! The adobo, indome, Tom yum, green curry, katsu curry, pho, and kimchijeon are all some of my favorite dishes to make and i was absolutely turnt seeing Uncle Roger prepare those dishes. Thank you Uncle.
I was always skeptical about MSG until I did a blind taste test with steamed broccoli. HUGE difference! But yeah, put this stuff in any pasta dish and you’ll have everyone wanting the recipe
it's true lol as an asian, i grew up eating broccoli soup (with msg of course) and to me, it's just tastes super good (although ashamed but i prefer this kind of broccoli much more than cilantro) when i watch cartoon from the western and see how disgusted children are with broccoli, my brain just can't process it :)))) now that i see it's thanks to the msg in it :V
Most malaysians are great home cooks, helping their parents out in the kitchen from young gives them that experience and instinct that only time will develop. Plenty of home cooks that are better than actual chefs out there.
food is a very important part of our lives in Malaysia, and also the rest of Asia. till today, my mum shops in wet markets to get the freshest ingredients and do not like super markets.. everyone is a food critic and will fight anyone and everyone over which place is our favourite. we also constantly talk about food everyday, every week.. etc.. conversations usually start with "where are we going to eat?". when you bump into someone you know in town or anywhere, we usually ask "have you eaten?". because we do a lot of home cooking, many of us watch and get involved with cooking at home from a young age. Just a small snippet of how important food is to us.
yes he does. He did mentioned in his past videos that he is a home cook but average one. It seems like a lot of his cooking you see in the video he picked up after colaborating with actual cooks
Yeah, these 3 together have probably 10x the msg sales for non Asian people in the west. I have a salt grinder, msg shaker and pepper grinder next to the stove at all times.

Traditional Caesar salad dressing has anchovy paste in it, which is a ton of umami flavor, so I wouldn't think adding MSG would make that big of a difference.... I'm going to have to try this.

MSG DOES make grilled cheese taste better, but you have to apply it to the butter side of your bread after grilling it. It's like salting it but a much more pleasant mouthfeel and it really brings out the butter flavor.
I appreciate that you allowed everyone to do their schtick. Roger with the over the topness. Guga with that deep bass voice over. Let it breath, love it.
MSG with wings is god tier. One thing I did was use the same seasoning solution Binging with Babish does for baked wings before putting it in the oven (mix of 1 tsp baking powder and 1 tsp kosher salt). However, I substituted half of the kosher salt with MSG. Not only did this make the wings just as crispy as BWB's wings, but they also made sure the MSG flavor was baked right on the wings themselves. Top that with buffalo sauce (this one didn't include MSG), and it just added a whole 'nother layer of flavor to the experience.
These Collab videos with such different backgrounds are easily the best videos. Uncle Roger, a comedian, keeping pace with 2 incredible chefs was great to see.
I would love to see all the commentary on each dish. I know the video was long, but what I wouldn't give to see them interact. Also, love how they brought a chef, a cook and a comedian into the same kitchen, and how something so simple like packaged noodles still impressed them.

Ever since I started buying the 454g/1lb bags of MSG on Amazon I have had a tendency to put at least a sprinkle on almost every (salty) dish I eat and I haven't found many where MSG has a negative impact.

I mean, the picanha was always gonna win. I'd have bet on the Pho to make the final as well. But that pizza was a total surprise! And it served as the perfect base to combine all three dishes in the end. What a great show, guys! You should get together at least once a month.
Caesar salad dressing is a glutamate bomb to begin with. Anchovy paste=MSG. Egg yolk=MSG. Parmesan cheese=MSG. Not surprising that extra MSG elevated it even more, but I was surprised that it ranked _that_ much higher.

Was out and about today with my roommate on a Sunday drive in ATX. Saw JW out driving around with Kate. I’ve been subscribed to JW for several years now and finally getting to see y’all made my day. Thanks for putting out this awesome content. Keep it up!
My theory about MSG is first you need to add it once you completed you flavor profile of the dish (once flavor profile and not texture of done-ss profile) and it needs time and a medium to have it's way through all out of the dish, like a little sprinkle on top of nuggets didn't do much since breading did not allow it more than the top layer, whereas on steak the muscle fibers allowed it to go threw it all and that theory is particularly shown on dishes with soups, which proves it well.
That's true for most seasoning - salt, vinegar, herbs etc sprinkled on top versus letting them penetrate, ideally in something like a marinade. Every chef will tell you to add salt to a steak and let it sit for 10 minutes before cooking.
Can I just say, everything about this video is fucking awesome. Editing is GREAT, love each creator in this collab, love watching each of you cooking your own and each other’s recipes, smart to include those clips in between… Like damn I’m having a crazy time thinking of a YT collab that was done so well! Traditional Caesar salad dressing has anchovy paste in it, which is a ton of umami flavor, so I wouldn't think adding MSG would make that big of a difference.... I'm going to have to try this.

MSG DOES make grilled cheese taste better, but you have to apply it to the butter side of your bread after grilling it. It's like salting it but a much more pleasant mouthfeel and it really brings out the butter flavor.

Coming back to this a little over a year later and it’s amazing to see the night and day difference between Josh’s fitness
MSG with wings is god tier. One thing I did was use the same seasoning solution Binging with Babish does for baked wings before putting it in the oven (mix of 1 tsp baking powder and 1 tsp kosher salt). However, I substituted half of the kosher salt with MSG. Not only did this make the wings just as crispy as BWB's wings, but they also made sure the MSG flavor was baked right on the wings themselves. Top that with buffalo sauce (this one didn't include MSG), and it just added a whole 'nother layer of flavor to the experience.
I use MSG in my cooking quite a bit but never would have thought to try it with wings, definitely will next time!

Ever since I started buying the 454g/1lb bags of MSG on Amazon I have had a tendency to put at least a sprinkle on almost every (salty) dish I eat and I haven't found many where MSG has a negative impact.

Caesar salad dressing is a glutamate bomb to begin with. Anchovy paste=MSG. Egg yolk=MSG. Parmesan cheese=MSG. Not surprising that extra MSG elevated it even more, but I was surprised that it ranked _that_ much higher.

My theory about MSG is first you need to add it once you completed you flavor profile of the dish (once flavor profile and not texture of done-ss profile) and it needs time and a medium to have it's way through all out of the dish, like a little sprinkle on top of nuggets didn't do much since breading did not allow it more than the top layer, whereas on steak the muscle fibers allowed it to go threw it all and that theory is particularly shown on dishes with soups, which proves it well.
That's true for most seasoning - salt, vinegar, herbs etc sprinkled on top versus letting them penetrate, ideally in something like a marinade. Every chef will tell you to add salt to a steak and let it sit for 10 minutes before cooking.
I just bought my first ever bag of MSG a month ago. It's huge. Works nicely in selected applications, as you mentioned! Thanks for this!
