As a Vietnamese, I can confirm that every house has MSG in their kitchen and they make lots of things with it.
But not in Phở. Vietnamese use it bc we are lazy and dont have enough time. We dont like sweet from MSG, especialy Phở.

no, daikon is normally used for Hu Tiu. Adding daikon to pho may help with clearing the broth but it may alter the taste.

Pho is actually French, the Vietnamese learned some French cooking and learned "pot au feu" and slightly changed the recipe. The name Pho sounds very similar to "Feu"

I’m quite skeptical about how it actually tastes though. I’m sure it’s gonna be better than most Pho you can find in western countries but compared to authentic Pho (northen style) in Vietnam, that broth does NOT look clean at all.

Except when it comes to MSG. I've seen so many street food full of MSG that can make you from sick to hospitalized. Speaking as a vietnamese here, whenever you eat vietnamese street food and feel numbness from the back of your head, that mean they put a shit ton of MSG in.

Great job Uncle Roger! Love your videos! I've seen people freeze the beef chunk a bit before slicing so it's not squirming like jello when being cut. Do you approve of that? You can slice it beforehand anyway and let it rest till room temperature as the hot soup will cook it anyway after you assemble. This is my favorite dish and I absolutely eat it at least once a week to make me go into my happy zone.

As a Croatian, we don't have many asian food restaurants, so, when i moved to Germany 3 years ago, i was thrilled to try everything Asian American and American UA-camrs were getting.
From ALL the stuff i tried (ofc i haven't tried literally everything, but a lot)

The Little Viet Kitchen is my favourite place of Vietnamese food outside of Vietnam - Thuy is sooo lovely when I met her and she signed my book. We bonded over Asian parents' disapproval and free wheeling with quantities in recipes - she is absolutely adorable. Can't wait for her restaurant to open up again.
