- In this cake decorating tutorial I show you how I made this dusty blue themed cake decorated with Meringue Pops, edible glass shards, white chocolate drip and edible gold leaf! I know that there is a lot going on in this design, so I will attach links to videos that have the recipes for the meringues and the edible glass ( scratch isomalt) I hope you enjoy this tutorial and find something in it that you can use!

Meringue recipe = • Bloody Faultline Cake ...
White chocolate drip= 1 part heavy cream to 2 1/2 to 3 parts white chocolate. Heat the cream for 2 minutes in the microwave. Pour over the chocolate and submerge all of the chocolate. Let it sit for a few minutes and mix with a whisk. Add white gel food coloring if you want it a bright white. Let it sit for about 15 minutes until it is drip thickness. Longer if needed.

Mary, Mary! There is so much that I love about this cake and tutorial. I love the meringue, gold and beautiful light blue color, really just amazing to look at. I love how you stress about the “sugar”😊 temperature and time because it is extremely hot and when looking at videos you don’t really know how long for each step and that’s what you do in your videos. ❤

Love it! A couple questions... Can the meringue pops go into the fridge after you decorate with them? I almost always finish a cake the night before customer pickup. The other question is HOW THE HECK do you pick up gold leaf with your hand and have it all go on the cake? Mine just sticks to my finger and is impossible to transfer that way. I'm about to buy a couple packs of the kind you linked to see if maybe mine is different.
The humidity in the fridge would not work well with the meringue unfortunately;( you could do the rest of the decorating and just leave room for them. That is what I have to do because I finish the day before also. I try to make sure I don't have any fans or airflow happening when I apply the gold leaf. Also, my hands are pretty dry in general. They do make gold leaf that you can buy that is attached to transfer sheets that seem to work a little easier. Loose sheets can be a nightmare!
