Then you’re not Korean, in Korea you eat RAMYEON not RAMEN. KIMCHI RAMYEON is seperate and does not include actual pieces of kimchi but kimchi in 가루 texture..
You're supposed to have the chashu/whatever ingredients marinated (if needed, seafood and vegetable toppings you probably can just have them freshly boiled) separately, you make the miso tare separately, you make the noodle separately, and you make the broth separately. Then they all come together in a bowl. I s2g Jamie and Nigella both treated ramen as if it's a not - Pho. Also soba noodle has its own mild flavour, it's why it's always eaten either just by dipping it in tsuyu sauce when served cold (usually during summer) or have it in mild, hot tsuyu broth. You put it in a rich broth like ramen always have, you lose that flavor. Btw there is kimchi ramen, it's just a new topping and flavour.

I worked in a Japanese Ramen shop branched here in the Philippines and trust me we don't do Ramen like that. Our Japanese bosses are very strict when it comes to the food we make and I know he fucked it up so bad 🤢
