There is a kind of gado gado that uses tofu, but instead of smooth silky white tofu, we use fried ones, also fried tempe is another option also. It varies depending on the region.

I am indonesian, and even i feel heartbroken watching Jamie Oliver making this food. Making peanut sauce for gado gado never use soy sauce nor fish sauce, and also if you have gula melaka it tastes better. And why use blender machine?

Indonesian here. First, it's not Gato-Gato, it's Gado Gado. Second, Gado-gado is a simple dish in here, so it hard to f**ked up and it is different to western salad. The key to make tasty Gado Gado is the peanut sauce. You can throw any boiled or blanched vegetables as long you make the peanut sauce is correct. What he did is a monstrosity and he make Indonesian ancestors crying and pissed off Indonesian. How to make peanut sauce in every household and street food vendor are different. But the basic ingredients to make peanut sauce are roasted peanut, palm sugar, a clove of garlic, small amount of chili, and salt, sugar, or msg and grind it up on pestle and mortar, add little bit of water. You can add shrimp paste or more chili if you like. Never follow his recipe, please!
