Made this many times by now. To the commenter who said, do this: 2 cups cauli, 1 cup parmesan, 1 egg . . This is the most delicious crust ever!! I topped mine with roasted broccoli and brussel sprouts, red onion, fresh mozzarella, kale, and more parmesan. I didn't use salt. Super food pizza! 😋

Instead of a pizza stone, I pull the crust out after the first 15 minutes, then flip it over and bake an additional 7 minutes. That way both side are browned evenly. I also sprinkle basil, oregano, onion and garlic powder on both sides before baking. Just use two pieces of parchment paper to hold the crust together when you flip it over after forming it in the pie pan.

I'm going to try it mine was good but not as crispy as I like it and I don't have a full size oven for a pizza stone.

The only reason that I'd give it a thumbs down is because I put on 1.4lbs after eating it. Making it wasn't too bad and it was delicious but I won't be maki g it again.

I've made this pizza a few times. The first time I used only one (1) egg because that was all I had on hand and the crust came out as Dr Berg described. The second time I had two eggs and I didn't notice a difference in the texture or quality...still very good. The 3rd pizza, I used a different size pan and this time the pizza came out too moist and soggy, but still good. What I realized between the first two attempts, I had split the pizza crust "dough" in half, so basically it yielded two crusts. SO, the lesson I learned is 1) you get 2 crusts per recipe and 2) press out the pizza crust as thin as possible, this helps the moisture evaporate (no need for the extra steps of "drying" it out. But I do have one question...is this pizza meant to be shared, because I ate the whole thing. :-)

The other important factor is the amount of liquid any toppings can release onto the crust, which will them make it more moist or susceptible to being too mushy. So tomatoes, greasy pepperoni, sausage, mushrooms all contain water. I think either cooking it out in a dehydrator a little, cooking in microwave between paper towels with a heavy plate over it to extract excess water will make a huge difference in how crispy the crust will turn out! Love everyone's versions and ideas though. It's all helpful in making a damn good and healthy pizza alternative! ❤🌈🙌

One more thing you should do is take the Cauliflower after you grate it put it in a pan...Heat medium for 4 or 5 minutes....Let it cool down...Put it in a towel...Fold it up in a ball and squeeze out all the moisture....If your pizza was soggy that's why....too much water.

I have tweaked your pizza a bit more... What I do is after I shred the cauliflower is I cook it in a dry pan on low heat to remove moisture. After that cools I can use it for the base. and when I make my pizza crust I find that I like half mozzarella half hard parmesan grated, salt and garlic powder to taste. I only use one egg. I too had a problem with the crust being soggy even after cooking it first ...I found it helped to put it on a wire rack and let the steam go off. using a hot stone is a smart idea! thanks for your super great tips keep the videos coming!

Crystal Laws: We do the same with drying out the cauliflower on low heat in a no stick pan and that works very nicely. We also grate a whole head of cauliflower and sometimes add a couple of grated carrots to the mix and that makes 2 nice size oblong pizzas that we bake on parchment lined cookie sheets. The pizza is also very good reheated the next day. We think it's a bit nicer with added carrots. We also tried both cheddar and parmesan in the crust instead of mozzarella and harder drier cheeses are better in our opinion .. but .. if you look up the Acid Load of cheese, the mozzarella scores about 6.0 and cheddar is around 23 and parmesan is way out there at 34, so as good as they are, think we'll stick with mozzarella and use parmesan very sparingly sprinkled on top or not at all. I think it's healthier just using mozzarella. Just my opinion.

Crystal Laws Do you leave it on the parchment paper when you put it on the pizza stone?

    • @crystallaws7050
      @crystallaws7050 8 років тому +8

John Coleman yes for transferability however what I have found is if you can cook it on a wire rack you're better off because there's so much moisture still left in the cauliflower and if you can cook it on a wire rack above the pizza stone it helps tremendously to make it crispy

I just made this. It is better than the real thing!! The crust has a crunch, a bite and a chew to it. Amazing flavor! No bread taste.. no cauliflower taste. No egg taste. Incredible!! I did roast my cauli rice first, tossing with a little olive oil, basil, pepper, garlic powder... Thank you So Much!! Grains make me incredibly sick, and now I can finally enjoy pizza again!!
    Grateful!

I just made this…it’s in the oven right now. I have been craving pizza. Can’t wait to bite into this!! Thanks, Dr. Berg!!
Update: that was DELICIOUS!! I may have eaten half of it before I could stop. 😬🤣 I added some oregano and garlic to the crust mixture and topped it with bay leaves, green bell pepper, red onion, pepperoni and lots of mozzarella. Once cooked I sprinkled it well with red pepper flakes and I’m pretty sure my eyes rolled back in my head with pleasant surprise.
It didn’t stick to the paper. The texture was perfect, I held it like a slice of pizza. Not soggy at all. I’m going to experiment with adding more spices to the crust but overall I loved it!! Thanks again, Dr Berg!!!!

  • @NVprods

There's a place in NY that does the cauliflower pizza in a traditional pizza oven. They use cauliflower, mozzarella, eggs and Olive Oil. They do drain the water from the dough. But they do not use the parchment paper, as you and every cauliflower pizza recipe says to do, and they put the toppings on the uncooked dough and then put it in the stone oven. They do not cook the dough first. Now this might be because they are making it in a traditional pizza oven, but they say it makes the crust crispy just like a real pizza. I would think that if you have a pizza stone, it should work the same way in a home oven. Maybe give that a try and see if it works at home. Thanks for all your videos.

We use to pick food of the floor all the time and never died or got sick over it, little babies do all the time and that saves them from many diseases as their immune system gets stronger on the bacteria they naturally ingest daily. My pizza has a cheese or meat base. As in there'd this Brun uusto (cheese) crust sold in the shape of a pizza. I put on sauce, toppings and cheese and bake it for 10 minutes.
I also sometimes use a ground beef/turkey/chicken with 1-2 eggs as a base. In that case I usually bake that crust for 5-10 minutes before adding the toppings.

I got up early this morning and tripled this recipe and made a bunch of individual little pizza crusts for a gathering with old friends. It didn't take all that long (I used a food processor rather than grating it). We all put our own choices of toppings on them. Everyone loved it, even the non-keto folks! Thank you for a great alternative! Next time I might try adding a little garlic and Italian seasoning into the crust, reminiscent of a rice crust recipe that I used to make.

Oh, thank you for the recipe! The pizza looks yummy! I am going to try it tomorrow. By the way, I learnt of the existence of the intermittent fasting just 3 days ago (from your videos). And I have started immediately. And even though it has been just 2.5 days since I started, I feel SO SO SO good! I feel full of energy and just great. I am not overly fat, I even have normal weight for my height, sex, and age but my belly is bigger than it should be. So I studied many of your videos, learned why it is and how to improve my health and life. THANK YOU SO MUCH, doctor. Now I know what to eat and when to eat it and what to avoid. You are the only doctor who told me why I have several health problems (bigger belly, a tiny spot of alopecia, gall bladder problems, mood irritation, hypoglycemia when I didn't snack between meals, etc.). Now I know these things can be improved and even gotten rid of. I wish all doctors were like you. I wish they didn't see just a couple of non-important symptoms that are not connected to each other. I wish they realized that those symptoms actually ARE connected and caused by one thing. Have a really nice day, doctor. You have helped me so much. And you have probably saved me from worse diseases.

Great recipe, my wife made it for me today (one pizza as your recipe, the second with fajitas and avocado topping). One tip, cauliflower has so much water that in order to get a crusty base you should not use 2 eggs, one is enough for the recipe.

So for anyone not in the socio economical bracket to have an operating oven, here's the deal. Fry the mixed cauliflower, mozzarella, and egg. Once that is done, put in the fry pan whatever ingredients you like. Saute them, then fry them all together. Don't forget to add the tomato paste towards the end of the frying. I used half the amounts; one egg, one cup of cauliflower and one cup of mozzarella, and that made plenty for a meal. Its kind of like eating a pizza omelet.

I made these for dinner tonight. I cook one side on baking paper, flip it over and cook the other side with no baking paper, then put the topping on. I just use one of the pizza trays with holes in it. It turns out primo and my non vegetable eating child eats it, Yay! Thank you.

Ok. Here's what happened. I made my own pizza Friday night as exactly as Dr. Berg made it (but no pizza stone) with the same toppings. It was so delicious, exactly like pizza! I ate 3/4 of it in one sitting. I would have finished the entire thing off but I realized I was eating 3 cups of cheese and wall-to-wall pepperoni. So I guiltfully put away the other 1/4 leftover in the fridge. I weighed myself first thing Saturday morning and I gained 4 pounds. Ekk! OK, water weight I hope, it has to be. After I took a deep breath I rationalized the weight gain and I ate the cold 1/4 leftover pizza for breakfast with my bulletproof coffee. Wouldn't you? But I did proceed to eat as keto and as cleanly for the rest of the day. Today, Sunday, I'm down 1 pound. I'm getting back! Will I make this pizza again? SURE WILL!!! But unless I'm going to share it, I'm going to cut this fabulous recipe down to 1/4 and use egg whites to get it down. O-M-G! You've got to make this, it was really easy and really good. I'm still thinking about it. But there's no more mozzarella in the house for a while! Whew!!!

This crust reminded me of a wrap like product I found in the deli. It's 100 Parmesan cheese, a round flat sheet that gets microwaved for 1.5 minutes. You have 30 secs to bend it around asparagus, or into a 🌮 taco shell, or whatever shape, and then it turns hard and crunchy. Delicious
