One extra step, after you shred the cauliflower, put the crumbs into a pan at low heat and evaporate out moisture from the cauliflower crumble. It removes around 1/3 of the volume. This allows for a thinner, firmer, and more realistic crust. Be sure to bake it on a parchment paper. Easy to remove.

@@terryriley7490 One large cauliflower produced around 3 cups of crumble, I split 1/3+ for sauté'ing in the pan on just enough heat to feel steam coming off of the cauliflower. I have made this pizza many times and it is great! My only mods are to add EV Olive Oil to the crust mix and also open and quickly vent the oven (using a Convection oven) a few times to allow the moist cauliflower air to escape. Also bake it on the parchment paper on a preheated (20 mins) pizza stone. Our entire garden is now specifically for growing items for making this type of pizza.

I also add greated hallomi cheese ( which takes a bit longer to melt than mozzarella) but it's so delicious, and I add a sprinkle of zatar too ( dried Middle Eastern thyme) onions, tomatoes, oregano, and garlic powder. Then I put 2 tablespoons of shredded Parmesan in each cavity. I bake it at 375-400 when they start to get golden brown take them out let them cool. As they cool they were literally pop themselves out of each cavity. AND voilà! You have giant Parmesan crisps. I went to Salvation Army find me an extra baking sheet just like it for a dollar. You’ll know when you see it it has 12 cavities there probably about 2 1/2 inches in diameter? And it has the impression of waffle cone. They come out perfect every time! I use them on salads and dip them in sour cream lol just a good all-around snack. Sometimes I mess around and flavor them with seasoning before baking. Another keto crust I get is at Walmart. It lists the exact same ingredients as Kbosh with an additional ingredient in psyllium husk, which is fiber (6g for the entire crust). The only issue I always had was the soggy crust even after pre-cooking the crust. I'll try again when I make some more and try maybe cooking longer after adding the toppings because I think I cooked only about 5 minutes. But you need to watch that you don't burn the crust, especially on the edges during the precook. Also, if you love pepperoni like I do, try to find some that has minimal processing because it'll be better for you.

Dr. Berg, I love all your videos. But this video I am totally in love with! Why? Because I Love pizza!! I also appreciate a prior video you did with your Mrs. on how to make a healthy pizza. It was great and informative. Thank you so much for this video as well as your platform. Keep it up, Sir. Here's a fun fact: Your birthday is five days after the late Dr. Bernard Jensen's.

I do the pizza crust with almond flour, mozzarella cheese, eggs and spices and it turns out pretty well, I usually use a lot of vegetables as toppings like bellpepper, onions, mushrooms, sliced black olives; and also bacon and pepperoni. I even use flaxseed meal, and top it with nutritional yeast and parmesan cheese if I feel like it, it turns out super nutrient dense, but of course make sure your using quality ingredients and watch the carb content

Sounds great. We found the Dr’s crust to not be firm enough. Do you mix in the almond flour with cauliflower, or do you make an actual dough with the almond flour?

Unfortunately cauliflower doesn’t agree with my body and is physically uncomfortable. However there’s a company Thin Slim Foods, they make hands down the best keto ZERO carb crust I’ve found yet. Not affiliated with them, don’t like most of their products, but the crust is actually pretty good. Try it! Helps to par bake it for 3-4 minutes before you top it. I bake at 450f. Dr. Berg is awesome!

I love this! I have also done it with a broccoli-cauliflower base. The 2 veggies combine very well and gives the crust some extra punch...and then also I added black pepper to the base mix...

Dr. Berg, what about 365 Whole Foods Market cauliflower crust? It contains the following: cauliflower puree (cauliflower water), chickpea flour, mozzarella cheese (pasteurized milk, cheese cultures, salt, microbial rennet), potato flour, water, cage free egg whites, xanthan gum, spices (Rosemary, basil, thyme, oregano, marjoram)

    All right! Thank you!
    I love pizza!
I was getting sick of adding almond or coconut flour to everything to do keto.
I have to admit, Im not real fond of cauliflower, so will be adding herbs. We stopped eating pizza when we saw the stores cauliflower pizza had so many carbs. I will keep my eye out for KBosh brand.
    Hopefully Fresh Thyme carries it.

Oh my goodness! I just made, and then ate, a cauliflower crust pizza. The store didn’t have the Kbosh brand crust, but had something similar, and I’m a happy camper! I’ve been craving pizza for some time.(about 5 years since the last time I tasted a pizza, and I live in NY State where there’s a pizzeria on ever street). Well, today it was so satisfying to eat this cauliflower crust pizza. Now I can have a goodie night, and not feel guilty, or reck my keto diet, or feel sick to my stomach. The only thing I couldn’t have was the cheese. I’ve got to find either goat cheese (at the farmer’s market, or something similar to that to have with the pizza to replace the mozzarella. If I have mozzarella or parmesan it goes right through me and I end up feeling sick and in so much agony. But even without the cheese this was so good and satisfying. Thanks Dr Berg for mentioning it!

Made this pizza and took pics for friends and they thought I was joshing them. They honestly thought I had bought it. It is delicious. When shopping for a other 'Keto' crusts by far the home version was way better. Try it today. Look up Dr. B making it. But follow these instructions he is correct it could become soggy. Cheers all!

Dr. Berg, thanks to you, my family doesn't feel bloated and without energy after eating pizza. We weren't sure how many cups of cauliflower it would take for two cups, so we purchased two of them. So far, we made two delicious pizzas and still have about 1/3 of the first cauliflower left. I think I need to now google "Dr. Berg cauliflower" to see if there are other recipes.
Here is an interesting experience making this pizza. We were full after the first pizza so we put the other pizza in the fridge. The next experiment was to see what is was like microwaving it from the fridge. It is just as awesome re-heating in the microwave. Also, since this is a cauliflower crust, the entire slice heats up (and no soggy crust). We had pizza for lunch and dinner! I am wondering if Kefir could play a role in this pizza, hmmm.
Thank you Dr. Berg for all of your videos. My family is getting healthier every day because of you!

This is a tough one for me as I’ve always been about the crust. If the crust was good, it pretty much meant the rest of the ingredients couldn’t be messed up too easily. Unfortunately even though I’ve tried this recipe or similar, it just isn’t the same so I’ve pretty much stopped eating pizza as painful as it is. 🤷🏻‍♀️

@Joyful 2022, I have an easy eggless pizza recipe: 200g almond flour (or 170g with 30g coconut flour), salt, 3 teaspoons of psyllium husk. Mix. Add olive oil and a little water to get a dough. It forms very easily. Bake at 180 deg C for 15 min. You can put it on oil on parchment paper too. It's quite forgiving if you don't get the amounts perfect.
Adding cider vinegar on top helps to lower the affect of the carbs (in the flour).
