    I just love Old Alabama Gardner so much, I learn a lot through the videos. The little happy dance over breakfast in this one made me giggle. Wish I could be OAG's friend or neighbor. He seems so knowledgeable and silly. I'm glad he made his channel. ♥️

      OldAlabamaGardener .. You're very welcome, for 78 you sure are a little spitfire (I saw you make those garden hoops in that video 💪) haha! I like the laid-back and take-it-slow feeling that comes with watching your videos. I never see you rush through things, you always take your time. On a lot of other channels, it seems folks are always in a hurry. Kind of reminds me of that ole country song by Alabama, "I'm in a hurry (to get things done)." At the moment, I live in Kentucky. I hope to use your worm casting videos as a guide to start composting as soon as possible. Your growing videos, and comfrey videos have been absolutely tremendous in helping me learn gardening, and getting started on natural/herbal based remedies. Thank you so much OAG. 🙏

    thank you for making it look so easy. Everybody else tries to scare a person about canning potatoes. I will be canning potatoes in the near future :) And yes now i am hungry for a good breakfast

    You know, watching your videos, is inspiring me to start a little canning again. I used to absolutely love to can. I still have my canner, and it's in beautiful shape. I always took very good care of it, kept the seals clean or replaced. All the parts are in good order. I've never done potatoes either. So that will be something I'd like to try. Mostly I did tomatoes in every shape or form, juice, sauce, etc. I did green beans, which my favorite variety was the Blue Lake. I did grow those in pots, the bush type. I did corn. I did apple pie filling. I did jams. I did zucchini and squash. But just for things to have on hand, I might try the 'meal in a jar' you showed us, and I'd like to do some potatoes and the fresh shelled pinto beans. Just for fun.. Nothing huge-normous. Thanks for the tip - I will check out Farmer's Markets.

    Good video OAG, I can Yukon Gold potatoes. Leave the skin on, cut in quarters or sixths the long way. Use a bamboo skewer to position them in wide mouth jars. They line up like good little soldiers and you save time by not peeling. Family loves them. Have a good Sunday.

    Just like you, I’m going to can mine this year. Never done potatoes before. You always make it look so tasty. I cook mine with bacon and onions. I eat them with tiny dots of yellow mustard across the top of the cooked potatoes. Yum!

    Thank you! And then there is my option, number 3, which is probably going to fail. 😯 I wish I had seen this video just yesterday when I handled my sprouted potatoes.
    I put mine in my shed wrapped in newspaper and boxed, sprouts and all. I expect to redo them after Thanksgiving and take option one.

      Hi Carlota, what you did is a good idea. It accomplishes at least two things, 1) it keeps the potatoes in the dark. 2) It keeps the potatoes cool. Both of these should slow down the potato sprouting. Thanks for stopping by

    So wonderful! I have a bunch of blue potatoes that need to be canned. I am growing greens this winter and will be taste testing them like you are. My hens are all free ranged and will be tasting the beautiful poached eggs from their efforts. Love your videos...

    I like my home canned potatoes. I have canned potatoes from the store & also my home grown potatoes. I noticed that my fresh potatoes didn't have as much starch when finished & stayed whiter. I didn't raw pack mine but yours looked very easy.

      Hello Vida and welcome to my videos. Store bought potatoes (unless you buy organic) have been sprayed with Round Up, so I don't know what tat does to the color of the potato.

      Penny: When canning it is important to not fill the jar so full of the vegetable, that you don't have enough room for water to be above the vegetable. If vegetables are out of the water, then the vegetables that are not covered by water will turn black or dark. This is especially true for potatoes. While the dark or black vegetables are still safe to eat, they sure don't look appetizing.

      OldAlabamaGardener also want to tell you that I have been using Vick’s on my feet at night. Saw your video on this and it works for me. Also I have some nerve damage in my feet from being slightly diabetic and it works wonderfully for that as well. So thanks again for sharing your knowledge.       Hello DJL, Yes, I usually don't have much success growing a fall crop. Usually the ground is too warm or hot for potatoes. Grow a good crop in the spring and can the extras. Thanks for stopping by.

    Now Charles you know you was supposed to save me some of them taters! LOL 😂 They sure looked yummy! I can’t wait to sneak over to Alabama and visit y’all one day soon! I’ll be trying to steal me a bite of something for sure!! Hahahaha
    I have yet to can any potatoes for myself. So many people have mixed opinions on whether or not to raw pack vs par boiled/blanched. Yours sure looked perfect. Not the least bit mushy. That’s what I want. Something I can quickly brown up for fried taters/home fries, throw in soups and stews or mash for mashed potatoes. Versatility. Now that I’ve seen how yours turned out I won’t be so nervous.

      Hellooooo Lisa. It has been my experience if you pre-cook the potatoes, they tend to become soft and mushy when canning. so, as you see in the video I put them in the jars cold. I did hold them in cold water (as I was peeling and cutting them up) to prevent them from turning brown or dark. and canned potatoes do brown up more quickly as they are already cooked. I have been so busy with other things that I slacked off on making videos. Now I am trying to get back into it!

    I just finished supper and now I want breakfast! Btw, I have planted potatoes with shoots about 5 to 6 inches long before and they grew nicely, I get them cheap from Lowes at the end of the season when they move all the garden stuff to the rear of the store.

    Great info, dummy me have fed potatoes to the pigs that were sprouting because I thought they were done and gone. So glad you are teaching us the alternatives. Since the potatoes come early in the south, most do sprout before their time. Can you pull sprouts off up to 3 times? Is there a limit if you want to use the potatoes to grow?
    Do you add a bit of salt to the potatoes raw packed? You are so bad when you eat them in front of us... LOL I will return the favor the next time I make some goat cheese... Girls freshening in January... Winter Nigerian Dwarf Goat Milk will run at least 8 % butterfat. Will make some awesome cheese...

      Hello OldeSouth, that is an interesting question: "Can you pull sprouts off up to 3 times?". I am right now running an experiment to see how many times I can pull the sprouts off and the potato still put out more. I'll let you know. But, I also have some stored in an old (but still running) refrigerator and so far they have not re-sprouted. I will be waiting to see you eating your home made cheese, perhaps you can teach me how to do it. Thank for commenting on my videos.       You can, the more you cook the potato the more in will fall apart when canning.

      Canned good will stay good as long as the lid stays sealed. Canned good will stay good for 4 to 5 years.

    I find the organic potatoes put shoots out quicker. I assume it’s because they haven’t been treated. Snipping off those shoots is s great idea.

      Hello Gerry and welcome to my videos. Yes, you are right, potatoes that have not been sprayed with Round Up will sprout quicker. That is why I try to save my own seed potatoes. Snipping off the shoots will set the potato back but it will grow more new shoots before spring. Thanks for stopping by.

      Hello and welcome to my videos. I grew and canned a pretty common variety called Kennebeck. Her is my thought as to why your potatoes turned to mush. Did you precook your potatoes? If yes, then they will usually turn to mush. I never precook my potatoes when canning. Please let me know which way you did it.

      I normally grow Kennebeck, but decided to try Yukon gold. I did cook them before canning because the Ball book said to. I called the extension agent and she said " yes, you need to follow the recipe exactly". I asked her if the potatoes would be mush by the time I boiled them and then pressure canned them. She said they had to be done that way to be safe. I may check the National canning safety website - can't think of the name of the web site right now. Thank you for your reply. I will try them cold packed next time. Do you still pressure can for the same amount of time in the Ball book if you cold pack them?
