But this cookie recipe, I've got to try. Thank you for the wonderful tip of refrigerating the dough for about 30 minutes.
If you swap about 2 tablespoons of the plain flour/all purpose flour for corn flour then it makes them much more stable and spread less with a more chewy texture.

It's really interesting to me how different the preferences for a "good" cookie for Brits/etc. Vs Americans. I would never chill and slice a chocolate chip cookie, and here when it's crisp on the edges that's overdone! Love your recepies though, always look forward to them!

These remind me a lot of my favorite chocolate chip cookie recipe ever: Chocolate Clouds from Sarabeth's Bakery. You NEED caster sugar for those (I just throw white granulated sugar and brown sugar in a blender), and it uses a little less flour. You bang the sheets on the oven rack in the middle of baking, knocking out all the air and leaving the cookies super crisp with that same crackled top. Putting them in the fridge to firm up and then slicing them seems easier than rolling them though.

When I freeze cookie dough I always "scoop" the dough into individual balls and store in a freezer bag. That way I can literally bake off 1 or 2 cookies at a time. (ok never just 1) Thanks
ROll them into balls instead, and break the balls in half, pressing the halves against eachother, so they do so loosely.. You'll get a more crackerly surface, with plenty of nooks and crannies and more crunch and flavor.
I tried making these cookies yesterday and they tasted fine but I was struggling with the conversions for the ingredients. I'm afraid that they didn't taste exactly as they should. I tried my best with getting them exact but I was wondering if you had any suggestions for US conversions? Thank you. 🙂

Jeffrey vdl it’s supposed to make the batter , whether it’s for cake or cookies, smoother and have a better texture. I rarely ever have the patience so unless I’m making a sponge cake I just don’t bother. I hope this helps

20 minutes sounds so long! i usually go for 10. i like my cookies all chewy and no crunch 😛
You can adjust to your oven- you want them to be firm around the sides but still soft in the middle.
