I'm so glad I could be a part of your culinary journey! Feeding our loved ones is such a joy. Remember, it's all about the love you put into it and those quality ingredients. Continue to learn and enjoy the journey!
I have already made dozens of amaretti biscotti according to Suzanne's mother's recipe and they are perfect 😍So I'm going to try this variation too. THANKS
Wow this is great! Almonds are really good, and if you love them you absolutely MUST try these cookies! I’m sure they will become your absolute favourites! 😍
I tried making the cookies with almond paste and I didn't quite work- I guess Kenny I am going to follow your recipe this afternoon for another go I'll let you know how the come out- I hope as beautiful as the ones you made - thank you
Thank You Kenny and Giorgio for sharing this recipe and of course thanks Vincenzo for presenting it. I almost can smell the cookies here! Must give them a try very soon. Buon natale!
Italian cuisine - so simple, yet delicious. What I love the most about the process of cooking italian dishes is the explanation why some recipes are done in a particular way, which makes it easy to follow if you try to recreate it at home.
But I wouldn't say….”so simple, yet delicious”. Instead, I would say that just because our Italian cuisine is simple, it is so good ! Complicated and very elaborate dishes is not that they are automatically special and delicious dishes. It is often just the opposite, as our Italian cuisine shows us. Where it is enough to simply take two ingredients (just to give an example "spaghetti aglio e olio") to get an exquisite dish. The motto of Italian cuisine is precisely.... “less is more” ! Which is exactly the opposite of, for example, American cuisine, where instead they think that only “more is more” ! Filling then the plates with a lot of ingredients.
I made the cookies!!!😮🥰🥰🥰 I bought the almond meal but I should have made it with almond flour. Believe me it was still delicious. I can’t wait to make them again. This was a great addition to my Christmas Cookie Collection ❤❤❤🎉Thank you Vincenzo
Thank you guys for sharing your recipe, it’s sooo appreciated. I am from Serbia & we love all things Italian . This year I will introduce almond biscotti on my Traditional Orthodox menu. And I will look you up when I come to Melbourne. Long and prosperous future to Vincenzo plate and family and staff!! God Bless!
Thank you Kenny for sharing the way Giorgio taught you to make these beautiful biscuits. My lovely mother-in-law makes these too. I have Coeliac Disease and being able to make myself some of these gluten-free biscuits will be wonderful. Lots of the GF biscuit recipes & biscuits from the supermarket are very dry & not very tasty. Merry Christmas! 😋🎄😊
How amazing to see a 94 year old guy making my favorite cookies!!!! And thank you so much Kenny for your wonderful instructions and friendliness and for helping keep our traditional food alive!! This is so important...nobody can ever get enough of those cookies and omg the cannoli look amazing too! I wish i didn't live so far away (Quebec!)..but I just made them and they were fab except they needed longer in the oven but I think it's because i didn't pinch them enough so they were a bit too thick in the inside to cook a bit better...my bad but hey... live and learn! I learned a lot from this video to take into all my future amaretti and ricciarelli making and yours look so amazing i will remember this video foreverrrrr! GRAZIE VINCENZO, GIORGIO AND KENNYYYY! XOXOXO
ive been making these biscuits for a few years now. There are many recipes out there, I found that they all vary with ratio between sugar and almond meal. I think adding citrus zest improves the taste and brings it up next level. This video introduced cinnamon and some honey. This is fantastic. i had to try this combination. I did make a batch and only used sprinkle of cinnamon and half teaspoon honey, it definately makes a difference. i would use a little so not to overpower the flavor of the biscuits. I even tried it with jam filling and they came out very good, They are my favourite biscuits. Something so simple can be this good. thanks for the videos. BTW i added more almond meal to get the right consistancy.
As an Italian, I remember as a young boy when I used to go to a wedding in Italy, the things on the cookies tray that I would take in particular, were just these almond cookies. I have always loved them, they are really a treat ! 😊
Oh my goodness! I want all those cookies in my belly 😂 they look so good. Thank you Vincenzo and Kenny for the recipe and techniques, I shall try to replicate it at home.
Grazieee 🙏🏻❤️ Kenny makes these almond cookies to perfection! I also want to make my own at home, who knows if I’ll be able to make them as good as the ones Kenny makes 🤣 we’ll see!
Thank you Kenny, at Brunetti Classico Melbourne, for keeping the traditions of authentic Sicilian Biscuits alive! Thank you Giorgio and Fabio, for bringing your knowledge to Australia! And mille grazie Vincenzo, for showcasing all these wonderful Artisans of Authentic Italian Cuisine! All these ingredients look so delicious! Pistachio, Cinnamon, Vanilla, Lemons, Sour Cherries and Almonds... Mmmm! I wonder if there is a traditional Coconut Flour Biscuits or Coconut Flakes? E ora, se mangiassimo all’italiana? ❤🍝 🇮🇹
Those look amazing! Thank you Vincenzo for bringing this to us Italians by choice. Kenny, thank you for sharing your skill and introducing us to these amazing pastries 😍
14:29 Caro Vincenzo, I guess we Italians have to adopt Kenny and give him honorary Italian citizenship. 😀 Anyone who has anything to do in some Italian place, be it pizzeria, restaurant or pastry shop, becomes Italian at heart !
Kenny! Thank you for sharing this recipe. Perfect timing, as I am going to try this on Sunday so I have beautiful almond cookies for Christmas! Great video!
Thanks Vincenzo great timing my good friends are going to Australia January 1. I’m gonna make them a list of all the places you’ve been to especially the pizza places I have homework to do. You should be an Italian food ambassador and an Australian ambassador for tourism.
Most welcome 😊 I'm delighted to hear you're giving the almond biscuit recipe a try for Christmas. I am sure your loved ones would certainly love this. A balance of flavours fitting for the nativity.
I got the same recipe from my mother (she can make them exactly like that, they are really beautiful... I can make them, but mine are a lot more simple shape... I'm not really good with shapes). They are amazing and a big plus is that after all the carbonara, gelato, panettone that need only yolk with these we can finally use egg whites.
I needed a use for the egg whites left from carbonara, and this gave me the basis for it. I could not readily get almonds, but cashews work surprisingly well. They are a bit denser, with a higher oil content, so the ratio of nut to sugar is different (still working it out, for now I'm cheating with a bit of flour). I may experiment in the future with different blends of nuts.
Mine too! A bite from this wonderful cookies would really bring you back to memory lane. Wishing you a Buon Natale filled with sweet moments and delicious treats! 🍪
Hey Vincenzo, I've been with you since around 300k, I'm a little late to the party but congrats on 1 mil man, I love your videos and have used them ever since I moved into my new apartment, cheers
Love the video vincenzo love your content your a amazing UA-camr I love watching your videos they are the greatest and the best and the coolest the almond cookies look very yummy and delicious I am so going to make em
Haha ciao my friend! Grazie, I’m happy to hear you enjoyed this recipe! Would be great to try them directly from Brunetti Classico, or you can try making them by your own 😍😋
Vincenzo - you have to be very strong now! "Guanciale, egg, pepper and pecorino. These are the cornerstones of a good carbonara. At least that's the case so far. Luca Cesari, a food historian from Bologna, believes that the classic of Italian cuisine has not been implemented correctly. In a video he uploaded to his Instagram channel, he presents the alleged original version of the carbonara. According to this, garlic, bacon, beaten eggs and Swiss cheese belong in the sauce - and Gruyère. "I simply recreated the carbonara from 1954, which was the first to be published in the magazine 'Cucina Italiana'. It's not my fault if this was the carbonara recipe," the Italian told Reuters. 🤣🤣🤣🤣
Ciao amico! Isn't it funny how recipes can take unexpected turns over the years? The classic carbonara we know and love has some variations. 😄 Whatever version you prefer, the joy is in enjoying a tasty dish. Buon appetito! 🍝🇮🇹😊
Vincenzo, I have a question for you! I have made Maria's almond biscuits from your channel and twice I made them with icing sugar instead of caster sugar and they became very hard - almost inedible! I thought it was because of the starch in the icing sugar. My question is: How come these biscuits did not become hard in spite of the fact that they were made with icing sugar. Was the sugar used in THIS video real icing sugar or just finely ground normal sugar without starch? I am asking because I don't want to experiment again. Thank you for your answer in advance.
@@Percykap it's a common substitute for egg whites. I made it for someone else, and it works very well in this recipe. Egg whites taste better obviously. Just like how real milk tastes better.
Will you upload some dish for cristmas? I kinda curious since my nation not celebrate it so fancy like others nation. The thing i knownis roast turkey and ginger cookies.
Stay tuned, I’m going to share a complete Italian Christmas menu video soon! 😍 Do you already know which dishes are you going to prepare for Christmas lunch/dinner?
I made this and it turned out like a pancake batter vs. A dough. What went wrong? Recipie for cookies themselves need less egg whites? I used the recipes 5... Ruined! Trashed it
Oh no, I'm sorry to hear that! If the batter turned out too runny, it might be due to the egg whites. You can try using fewer egg whites next time or add a bit more almond flour to get the right consistency.
omg, imagine doing anything for 81 years?!? ppl really need communist revolution, so ppl can go to pension and share std's instead of working at that age
😫Vincenzo I've made the recipe of your Mother in law, it was terrible. She used a whole bottle of almond essence. I did the same. I throw all of the dough because of the essence. You should remove the recipe from your website year 2019. Just one more thing, this grinded almond is called almond flour and not almond meal. Completely different texture and color. I am still your biggest fan man. Cheers.
We are so lucky becauase Kenny and Giorgio shared this wonderful Sicilian recipe with us. Please leave a comment for them
Your channel is great as usual
Thank you.
Thank you for helping me feed my family better and teaching me that seasoning is not as important as quality ingredients and techniques.

Must staple in any wedding =) can be made vegan if you use water from a can of chick peas instead of egg white
