I used to love to go to an Italian Bakery in North Beach in San Francisco and buy their cannoli …so good! I can’t wait to try this! I also love a good Biscotti with a Cappuccino. I may cut the sugar in half though. Thank Vincenzo and Antonio!
This is also the reason why in pastry shops, here in Italy, the cannoli are normally filled with that ricotta cream when the customer buys them, precisely to avoid that if they remain for a while with the ricotta filling inside, the fried waffles soften and lose their crunchiness, while it must remain crunchy. This, by the way, is also a sign of freshness of these delicious desserts. If you find yourself holding a very soft cannolo (singular) and no longer crispy, it means that the one is not very fresh.

I do have the fondest memories from the years we lived in NYC and would go with a group of friends, for my birthday, to a delicious dinner in Chinatown, followed by a walk over to Little Italy for cappuccino and fresh cannolis. I don't really care for cannoli and he knew it. Cheeky bloke. I think all the Nonnas had a huge crush on him.

The only way you will get ricotta like that in the western world is if you make it yourself. These gus must have a awesome hookup with the cheese maker that's for sure

Did you know that the reason why marsala has such a different flavor compared to other wines is because they leave the barrel open, so the wine is essentially oxidized. You could say that it's wine made the wrong way, taste is good though so...
Very surprising to see that the cannoli cream only has 10% sugar, i would have also thought that powdered sugar would be used rather than the granulated shown
