They are so similar to some traditional cookies, we do in Tunisia. If you add a little bit of cinnamon power and some orange flower water, replace the almonds, nuts with mandarin orange or date pates you get our recipe. Notice that the cinnamon power should be almost nothing a small very small amount
How about creme puffs or sfagatell, I think it's called? It looks like a clam shell and it is filled with an almond paste. We had them in NY and they are so good!!
I would definitely recommend whisking the sugar and almond together PRIOR TO dumping them into the liquids to ensure equal distribution. Also, be sure to blanch your almonds (remove the skins).
Thank you so much for this recipe I love it! My oven oven cooks way faster than yours I had to reduce the baking time a bit but they are amazing! I’m starting experimenting a bit with the recipe ( replaced 100g of almond flour by hazelnut flour and added a bit of Nutella inside the hole at the top it’s absolutely delicious ! ) I will also experiment with lemon, orange and orange flower extract (not sure about the translation here I just translated that from French sorry if no one knows what I’m talking about haha) Hope this message gives some inspiration to other people to try this recipe too ! It’s also so easy you can do it with kids like I did with my 4 year old daughter ! Thanks again from France ❤️
This is really interesting. I'm from Sweden and we have exactly the same cookie here. But I guess most of Europe share food recipes. My prehistoric ancestor went to Italy and took some "life styles" and the other way around. I find it quite interesting that Eva shows something and we have the same or something very similar. We'll never the less harper you need to learn the superior system the metric one and what ever temperature is called. 😉
I'm starting to learn the magic of baking with almond flour. I have recently purchased it and some almond extract. Thanks for providing me with another recipe! I will definitely try to make this. Can you do more Italian cookie recipes? I live far away from proper Italian bakeries, but have always wanted to visit and taste everything from them.
Siiiiiii, le Paste di Mandorla :) :) Super easy and super tasty... I love you guys because you are putting a great deal of emphasis on our Sicilian food! Sicilian Institutions must pay you as you are doing the best advertising ever!
As a child, between November /December, i remember my granma preparing "Pan'e Saba", based on wine must, almonds and sultanas..... Wrapped in transparent paper, it was a very welcome Christmas gift in every household..... A small piece was always accompanied by a sip of moscato (very sweet wine, sometimes, in Sardinia, still called "women wine" 😁) at the end of the dinner
thank you two for giving us this recipe. These are the best cookies I ever ate. I didn't use the cherries but I put almonds and pecans on top. Very wonderful cookies. Will be making them again.
@Lucille Petronella It is, fast and easy, but the cookies are awesome unlike any you ever had and taste very similar to marzipan only it's soft and goey. 🤤
Just came back to this video to say thank you! Tried many recipes on UA-cam but it didn’t come out right like these. Recipe and time in the oven was perfect!
Thank you so much for this recipe. They become my favorite cookies since jI found your video. I wish I could attach the pictures. Love, love your videos! Thank you 🙏
Good morning Eva and Harper May have a great wonderful day filled with happiness, I noticed yesterday it’s celebrate in Italy and around Europe that it was women’s international day wishing you the best Eva with good health and wisdom you are incredible and amazing keep inspiring and teaching your amazing culture when it comes down to food…
these are SENSATIONAL! i really wasn't sure if the dough was going to come together, but it did like a charm. really tasty and beautiful texture. you know when Eva is enthralled with the taste of something, and she spins her eating utensil or hand around to show how delish it is? well, we ALL found that it's THAT GOOD. this is a keeper, especially for Christmas treats. Molto Grazie Eva and Harper!
Love these we make them at Christmas, my family is Italian Canadian but from Sicily! Another idea is a cookie called Mustaccioli they are made with molasses I think and also a favourite in Sicily. Thank you for another wonderful video.

I am so excited to try these!! I am not much of a baker, but it looks like I could handle these. And I had to give up gluten a year ago, so the fact that these are gluten free is a huge plus. Grazie!

You guys have had me subscribing, seeing my first pasta-grammar-video a few days ago. todays dinner was meatballs bianco.... the sauce was so... umami. much love to you
I love you guys. I watch your episodes everyday and multiple times a week while I wait for the next episode. I'm making these today. Eva could you please make some gorgeous almond biscotti please. I have a die hard recipe that I use all the time but would love to see how you make yours. Cheers Shane
Love that you have Harper make do many things. Well done Harper. Having company on Sunday and needed a light, delicious dessert. This is the one! ❤ Thank you for your channel and introducing us to the many wonders of Italy! I have made 4 of your recipes so far. So wonderfully delicious!
Pasta di mandorle is a tipical cookie in Sardinia too, we do it in the same way..... We use a looooot of almond flour, to make Sospiri for example: almond flour, orange blossom water and sugar..... Old sardinian women still use pepare it for marriages
Hey! Love you guys. This is one of my favorite cookies as well. I am gluten free and am so happy that these are an option. I had some imported from Sicily last year and they were amazing. So soft and chewy. Will try to make some myself this year using your recipe. Thanks for sharing and Happy Holidays!
I though that almond paste and marzipan was the same, but I googled now, and I discovered that there is a difference on quantity of ingredients, almond paste is used for biscuits stuffing, marzipan is more shapeable so it is used for decorations... by the way I like marzipan sweets on Christmas time 😋
Your channel is so fun to watch. I just made these to take to my parents and I tried one (or 3) and they are delicious! Definitely will be making again and again.
Always have your eggs at room temperature no matter what you are cooking. Good Tip: Start preheating the oven, when you put the dough in the freezer to chill. Portion Tip: Use a small ice cream scoop so all cookies are the same size. These remind ME of the Thumbprint cookies yours truly bakes for Christmas. There are no eggs. But the three sticks of butter binds it all. These little balls get press by your thumb to make little wells. Then filled with jam. My favorite flavors to use are apricot and blackberry. Strawberry is good. Can give you the recipe if you want. ✌️♥️🌹
Bravissimi! - I grew up with these! I'm lucky to be Calabro-Siciliano... Both stubborn and over-reacting at the same time 😛 These are still found here in every proper Italian bakery.... sadly they are not as many as there were in the past. If you're ever in Toronto.... Ce sono tanti paesani di il sud..... Molto grazie per questo video :)
We absolutely love these cookies. And now, after having watched this, so craving them. Wish we could taste these through the screen. Great video, guys. Much love.
I enjoy making the Asian almond cookies. I have never seen these. I will be heading to the store for some almond flour today. They luck and sound so good.
IMHO is better to grind yourself the almonds , because the bought almond flour is less flavorful and sometimes too fine and” powdery” , in my experience.
Excellent looking Cookies, I bet they must taste amazing too. Almond Flour I'm beginning to discover is versatile enough that you could bake bread as well. As always thoroughly enjoyed the show. Thank both for what you do. Bless
amazing! You should come to Toronto one day and visit Cataldi Fresh Market, they have a Sicilian bakery and make these daily, and the market is FULL of everything Italian. An amazing Italian community.
One of the rare times I didn’t wish I was eating what you’re making. But only because I’m eating boiled Cajun peanuts fresh from the crock pot. Do Italians cook with peanuts at all?
I just love confections made with almond flour, they are so amazing. I can't wait to try these cookies. I have a question regarding the dried cherries, are those Italian or American in origin? Great video - thanks Harper & Eva. Are these close to the pine nut cookies found in Italian bakeries in the U.S.?
So easy, I have to try these! I wonder if these are like my favorite cookies at our Fresh Market, called Almond Pillow Cookies. The only difference is that they are only decorated with powdered sugar and are a bit flatter.
I made these with leftover dough from the Norwegian Kransekake I made for our friend's wedding anniversary last spring. I just didn't know they had an official name. 😊
Thank you Eva Harper tells the amazing story about how good these cookies are I remember going to nonna house and smell was incredible lol we had secret code to get into the house all blinds were closed doors double locked she didn't want everyone to what she was making 😋 😜 lol Nona / nono Ti penso sempre 😢 🙏 Vi amo e mi mancate entrambi più di quanto le parole possano dire ❤️

I am seriously addicted to them! Every time my dad would go to Siciliy he would send some. They are really great with an espresso!
