    Amazing presentation as always. I am subscribed to your channel! I am interested to hear your perspective on artificial sweeteners and their influence on our glycemic index. Namely, sucralose, aspartame, erythritol, and stevia (though these last two are not artificial).

      great question. The thing with artificial sweeteners is that even if they are zero or low calorie, they seem to still be linked with obesity and diabetes. Here is an article with some info...www.sciencedaily.com/releases/2018/04/180423085440.htm

    Thanks for your videos, really enjoy them. Just wish to point out there is a tiny mistake in the structure drawing for cellulose: an additional carbon in each glucose unit (as there is a turn next to O-link between two glucose unit, a turn typically indicate a CH2 in chemical drawing).

      Each glucose in cellulose should have 6 carbons :)
