Wekty if you can one day go to the Fish and Chips shop on the Pacific Highway in Gordon. Please can you try their potato Scallops, Batted Save, Chips and Fish. They also have good Tasmanian Scallops and they have good Calamari. That is my local Fish and Chip shop.
Stanmore fish n chips is really good! So nice to see it getting some love :) Stanmore shops is super underrated. It's got a Japanese sake and knife shop, an insane cake shop/cafe called hearthe, a nice pub and a really incredible fine dining restaurant in sixpenny, a great cafe called little mule, as well as the solid and well priced fish n chips.
Hmm u probably didnt know, Stanmore chips are hand cut, cold water soaked. Thats the holy grail for fish and chips, aka chippy chips. Thats why they're so special. When u pulled up alexadria shop's frozen factory cut straight chips and said its bigger and better, I just thought I'll let you know. Home made hand cut chips are ice water soaked to so the starch rinsed off and has a unique tastes to it, which factory flash frozen chips may not always get. And the chunky short chips from hand cut ones, no one makes them like that these days. I first went to Stanmore FnC a couple years back because i read on reddit some British FnC fans swear by hand cut chips a must have with FnC(fish n chips). They have mushy peas as well.

Damn. Surprised Ermington Ace's seafood didn't make it to the list. I live near Berala, which was Sydney's #1, but they donked out in the 00's. Now, I would say Ermington Ace's is the absolute winner. That family really deserves it. Check it out sometime, off the vids even. It's worth it.

Stanmore is ok but the fish isn't cooked at the right temp and drained. It has to cook in two temps and because it wasn't allowed to sit there it was oily and bready. For $13 it's very hard though especially with rising prices so it's a fair deal. Alexandria had a better cooked piece of fish and the oil looked fresher.
I've tried fish and chips all over Sydney. My favourite would have to be Neutral Bay seafood. Japanese owned and the batter they use is tempura style. Not very thick like most places. Ace Seafood in Ermington is also very good. Costi Seafood in Eastern Creek is good too. Ocean in Drummoyne is super over rated.

there isn't really any legitimate room for licence here. it's tartare... tartar is either stuff stuck on your teeth, or tribes of western asia. tartare refers to the chopped nature of the gherkin, capers etc in the sauce.

The best fish and chips are cooked in beef drippings/palm/olive oil! its healthy good for you. Thou everything these days is cooked in seed oils ("vegetable, canola,cotton,sunflower seed oils) which causes fatty liver, its all bad for you.
Its where they harvest the palm oil from that was being complained about not the oil itself from memory. It was deforestation of the endangered orangutans habitat for palm oil from memory. I havent looked i to it to much though
