I am not diabetic but I have family members who are type 1 and type 2. I started wearing a CGM because I wanted to figure out how to eat in such a way as to avoid blood sugar spikes and dips. There is something very special about barley. I have made barley bread, barley muffins, barley grits, and even barley cookies (using sugar substitute) and my blood glucose hardly moves after eating a normal serving size. There are different varieties of barley such as black nile, purple, hulled and hull-less. You can buy barley as a whole grain with the hull (if you want to sprout it), whole grain without the hull, or pearled. You can also buy rolled (flaked) barley, barley grits, and barley flour. I have experimented with all of these and have found that none of them spikes my blood glucose- either little effect or a gentle, sustained effect which has kept me full and feeling energetic for many hours.
Thank you Dr. Paradiso for sharing this truth!! so many views and just one comment. this is an excellent video speaking about beta glucans. if only people knew the benefits of beta glucans for the immune system...if only... search it people and try it to boost your immune system
Got my mother from 13.9 a1c to 5.6. Don't throw away the water. Make ice cubes then use in a sweet drink when you need a sweet. Or make tea and have it with a dessert. Keep it in your system. You will loose weight quickly so exercise. Also...watch out for your number to look low when you prick your finger. If constantly in your system you should be fine. TELL YOUR DOCTOR THAT YOU REPLACED YOUR STARCH. They will need to know that as they cut your medications down.
Barley and Buckwheat are the only food ahead for a healthy life... But these are not available everywhere and its too pricey aswell compared to Wheat and Rice.
I am diabetic and have high blood pressure. Can I eat water soaked overnight barley flour and eat it for breakfast without cooking like overnight oats. Will appreciate
i heat barley on a dry, non-oiled pan until it toasts to most of it being browned, to mix it with some butter or ghee and butter black tea. It's called Tsampa, from Tibet. I have an a1c of 5.8, and I am currently changing my diet to one including a majority of whole fruits and veges of a lower glycemic index and load. I wonder if the barley flour, once heated, is higher glycemic index, or lower. I read something online suggesting from a study in mice that it might well become even better for your blood sugar situation, due to i think it's called resistant startches, created from the heating of the barley. I thought at first perhaps the heating might remove fiber, making the barley flour easier to quickly digest and causing more quick blood sugar spike, but it could be it s the opposite. Any insights? I'm not a doctor or scientist so I don't know if I've presented enough details.
I just ordered a bunch of barley off Amazon to bake bread as I'm diabetic but I love bread. Only problem is i don't know if it's pearl barley. I'll have to take a look. July 13, 2023
I think they make Tabbuleh salad (lebanose people) make raw barley But I heard that barley is the most sprayed crops 🌾 with glyphosate in the world 🗺 I really don't know what to believe and do.🤔🤔
@@ryandlion6961 not so much with barley... but with malted barley. When youre cooking the starch break and becomes maltose in the water... try malted barley water and see how sweet it is. Actualy Barley Malt extract is a sugar used and many many processed foods.

Check your blood glucose level at 1 and 2 hours after meal
Dr Paradiso: can one eat hulled whole barley soaked overnight in water for breakfast; just like overnight rolled oats. Will appreciate

@@socialdarwinsm3313 All you can do is experiment and keep track of what it does to your blood sugar.
@@socialdarwinsm3313 never heard of this do you have any evidence to back it up. It might be true for oats
Hi Doc, you said 1 gallon of water, but how much barley? how much is in a box? And don't you have to cook?
Since he mentioned pealerd he probably mean like a store box of quaker barley.
There are 2 type of barley one spike sugar instantly.
you mean Barley that contains the outer latter as apposed to pearled?
