My daughter was overrun with zucchini from the garden and, being the only one in the family that liked it, she had run out of ideas of what to do with it so decided she would try her hand at zucchini bread. Setting the beautiful loaf proudly on the table, she waited for comments and finally asked "well, do you guys like my homemade bread?" Her son replied, "Oh yeah, Mom, it's really good but, next time, it might taste better if it didn't have all that squash in it."

I don't bake or cook like I used to. The kiddos are grown with their own families now. But now they supply me with goodies every week. I caught the rain in a flat bottomed bowl and measured it with my ruler so I reckon my measuring was right. The water was standing in the yard like we had just had a hurricane, no joking.

We had an inch of rain last night, first rain in almost two weeks, before that we had a 4 week stretch without a drop of rain, our garden is still doing good but only because it’s raised beds beside of the house where the faucet is, so far the water bill hasn’t been impacted too badly but we have had to water almost every day, so far we’ve put up 20 quarts of pickles and 32 quarts of tomato juice, not bad for a “city garden”…, trying to bloom where we are planted.
Much love from the foothills of WNC ❤

I made this today and it is so very good, this is my zucchini bread recipe now, thanks Tipper for sharing. It is a very pretty loaf, I made 1 regular loaf pan and 6 mini loaf pans. I used chopped pecan inside and whole pecans on tops of all loaves.

Zucchini bread is one of my favorites. A family friend years ago shared a tip of adding a small amount of crushed pineapple to Zucchini bread. It really didn't change the taste that much, but it sure was moist. I've been wondering about your mixing bowls for some time now. Thanks for sharing the info.

My favorite zucchini recipe, besides zucchini bread, is just to slice, flour, and fry. We also make zucchini sugar cream pie, which is the favorite pie of Indiana. It really is delicious.

My zucchini bread sounds like your recipe. We like zucchini cake. I use a yellow cake mix, two eggs, zucchini 1 and 1/2 cup. 1 cup nuts of your choice, 1/2 cup of pineapple crushed with juice. 1/2 cup of oil, 1 teaspoon of vanilla…when I have coconut I put in 1 cup toasted in my cake.

The bread looks great. I have only made zucchini bread one time, but I like it. I grew a few last year. I like to use avocado oil for baking and I bought a refillable oil sprayer on Amazon so I can use the same oil without all of the additives in an aerosol can. It seems to work well. We also keep olive oil for cooking.

Tipper, your zucchini loaf looks so moist and delicious! Granny's pecan addition makes the bread a Chef Granny Zucchini Bread. :-) The first time I ate zucchini bread was the fist few weeks I had been in the US. I was 8 yr sold. My family had moved to NJ from Italy. The next door neighbors sent their two little kids over to bring the bread. I had never eaten sweet bread with zucchini. What???? The bread had sugar! In Italy we ate the zucchini we grew on our farm, fried, breaded and grilled. The Zucchini Bread was in a way, strange because we had never eaten it! I believe that was our early introduction to American food. After the second slice we loved it!🥰 Best wishes, from Pia. ( Pia is my name)

I use zucchini, squash, onion cut in bite sized pieces in a cold pasta salad…..all raw, not cooked. My family likes a mayonnaise based dressing that I honestly just makeup and change almost every time. I also have done EVO, balsamic, red wine variations. Summer cold salads are our favorites!

Our favorite zucchini recipe is called Zucchini Parmesan. It's my grandmother's recipe. It's basically a well seasoned marinara sauce with cooked hamburger and thinly sliced good pepperoni. And Parmesan, mozzarella and peeled squash sliced in thin spears. You just take a baking dish and butter it, put the zucchini spears in the bottom then some sauce, mozzarella, parm and you repeat the layers depending on how deep your casserole dish is. When you get to the top you add a good layer of mozzarella, some parmesan, a drizzle of olive oil and salt and pepper. 325 for about an hour then 10 minutes on 350.

I love zucchini bread and just about any kind of sweet bread. Since I'm a diabetic I can't have any kind of bread very often, but I'd love to have a slice of this zucchini bread for a treat now and then!
