RACHEL - here is a recipe you might enjoy using zucchini - I make this regularly every summer and you'd swear that the zucchini was apple in the dish. I hope you make it and I hope you enjoy. ZUCCHINI COBBLER 8 cups peeled, chopped zucchini 2/3 cup lemon juice 1 cup white sugar 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 4 cups all-purpose flour 2 cups white sugar 1/2 cup butter at room temp 1 tsp. ground cinnamon In a large saucepan over medium heat, cook and stir zucchini and lemon juice until zucchini is tender, 15-20 minutes. Stir in 1 cup sugar, 1 tsp. cinnamon and nutmeg and cook one minute more. Remove from heat and set aside. Preheat oven to 375F. Grease a 9 X 13 baking dish. In a large bowl, combine flour and 2 cups of sugar. Cut in butter with pastry cutter or two knives until mixture resembles course crumbs. Stir 1/2 cup of butter mixture into zucchini mixture. Press half of remaining butter mixture into bottom of prepared pan. Spread zucchini mixture over top of crust, and sprinkle remaining butter mixture over zucchini. Sprinkle with 1 tsp. cinnamon. Bake 35-40 minutes or until top is golden. Serve warm or cold
After shredding, I pack a 1 cup measuring cup with it and flash freeze in mounds before combining them in a freezer bag. Takes up more freezer space, but makes it very easy to use in 1 cup increments.
I made Zucchini Au Gratin & it’s delicious. Sautée zucchini & onions in butter & oil, mix an egg, shredded Parmesan, cheddar, & mozzarella with cream or marscapone cheese & spread over it, transfer to oven, sprinkle more Parmesan & bake for 30 minutes at 400.
I dehydrate and then blend into flour for baking!! I make cookies, pancakes, waffles, bread, cakes and also add to soups, scrambled eggs and just about anything else!

When I was growing zucchini I used to shred it and then dehydrate it. Then when I wanted zucchini bread I could simply rehydrate it and you'd never know I had dehydrated it.
Oh Rachel, you need to get yourself a triple grater system for your Kitchen Aid. They're around 36$ and have fine, medium, and large cylinders for shredding. It works way better than the one your mixer comes with. One warning however do not stick a spoon in it while operating! Spoon slipped out of my hand, ended up in the grater! Stripped the gears in my machine! Duh! Took 4 months to get it fixed. They sell the KA grater at Walmart, QVC, or maybe Amazon. I use it to make your coleslaw.

I make stewed zucchini and my family always loved it! I put diced zucchini tomatoes peppers basil celery and onion vinegar and sugar or honey in it! I still put up at least 10 pints of it. Makes a great side
I was making a big pot of spaghetti sauce and decided to add some powdered yellow crookneck squash and my greens powder (beet greens/kale/spinach). My hubby & grandson had no clue and said it was very yummy!

I add shredded zucchini every time I make anything with ground beef. For example, in tacos, meatballs, and meat loaf. It's cheaper than ground beef and adds more veggies. I also like to add it to shredded potatoes to make hash browns.

I beg my friends for any extra they have...I dehydrate some thin slices with spices like everything bagel seasoning and they are like eating chips without all the calories. I also dehydrate some thicker slices for zucchini au gratin!!!
wow it's a really good idea to dehydrate them .. I do it with beets, parsnips .. and of course potatoes .. but never thought you could do the same with squash ... which spices would you recommend for squash? A good trick for them as dehydrated things, I dehydrate mushrooms when they are in season and the taste is best, then you have for all the wonderful things you use mushrooms, the rest of the year .. do the same with leeks etc they take up much less space and tastes just as good in a stew, etc. especially for people who do not have the opportunity for a huge garden with leeks for the whole year, so you can buy them when they are best and cheapest and use them all year round.
The joke of having "too many zucchini, you can't even give them away" blows my mind lol I never have enough b/c I love it so much. I also shred & freeze, throw them into stews all winter long, hide it in my chilli & make zucchini bread all year long!
I make keto pizza with it. It works well with the larger ones but make sure the seeds aren't mature yet. Slice in rounds or long boats. Put on tray lined with aluminum foil. Put some pizza sauce, cheese and what ever little toppings (we like pepperoni). Place under broiler for about 5 minutes or until cheese melts. Dinner is served!
What a show , you have tried more recipes than any person I have come to know. You are wonderful Rachel..I bought this cool toy that makes the zucchini into spaghetti form. I saute with butter , garlic and a few herbs. Best zucchini is cut into thin slices , dipped lightly in flour and yes the bad stuff ,fry in oil , I know , I know, bad girl right !! LoL.

I really like to dehydrate my Zucchini in slices and use it like chips. Really good with salsa, or dip, or with chicken salad like crackers. Really good.

I love zucchini I love all squash mines not doing too great this year but I’m about to replant I also dehydrate mine for soups ect. Man zucchini is good stuff I have lupus so it’s my noodles it’s my everything I even add it to hamburger grated to make it go further with taco seasoning or meatloaf it’s definitely a gift from God love your show stay blessed
Love your channel!!!! Just stumbled across it the other day. I love zucchini and I love making zucchini and squash fritters. Super easy and tasty. Just remember to squeeze out all the liquid beforehand and mix with parmesan cheese, egg, flour, and garlic. Make patties and fry or bake and serve with marinara. Super tasty.

Love your channel. Ive saved your zucchini list to have. I want to try the pineapple. But have to get to reasonable farmers market or stand. Most are as expensive as the stores!!. I tried container gardening but flopped. We had so much rain and I have so much shade but will continue to cut my trees,back in one area ro try to get a small area that doesn't flood. I've been putting all my leaves where it floods and scraps from veggies. Thank y I u gor all your recipes and all the sharing you do. Many people won't share recipes!! I do, all but 1 a good friend gave me from her grandma and asked me not to share, so I have respected her wishes for over 50 years!! And will continue to. I have won many blue ribbons with her cake, although it fell the w st tine I made. That was an almost impossibility!! Lol! I'll give you any other recipe I have. 1 is a many time blue ribbon winner!! We use a Julienne peeler on the really large zucchini to make spaghetti style noodles. We wrap the zucchini noodles, tomato sauce and veggies in aluminum foil and cook them on the grill when we don't want to hear up the house in the summer. This year I got a shredding blade for my food processor and it makes processing zucchini so much faster! We are shredding and freezing about 15 quarts of zucchini a week for use in cooking throughout the winter.
My favourite zucchini recipe is zucchini, lemon and ricotta tart. As I'm allergic to dairy I use a safe alternative. We also crumb and saute zucchini slices (lengthwise not rounds). I also dice some zucchini before freezing to use in the slow Cooker.
Another great use for zucchini is to use it in place of eggplant in a Greek dish called Moussaka! I have never had luck growing eggplant but I can grow zucchini like crazy! I just made some yesterday and it's almost gone already! I use ground beef instead of the traditional lamb and it is the best! Just food for thought!
I make zucchini brownies (low sugar) and it’s so much better than zucchini bread and that’s been one of our favorites for years. I love to ferment them and hopefully this year I have time for relish.
I wish people would give me their extra zucchinis! I love to shred it to add to literally everything... meatloaf, anything with a red sauce (pasta sauce, chili, Italian sausage & peppers, etc), fried rice, chicken zucchini and feta pasta... the list goes on. I have a kiddo who is being super picky with vegetables right now, but she'll eat the shredded zucchini when I add it to meals.
I like to take fresh zucchini slice it up thin saute it with onion and corn then add cheese into the pot and it's sooo good. My mother in law made it all the time for us and now I make it whenever I got some zucchini. All my plants died this year though they got eaten up by cucumber beetles 😔
When you posted this we were baking our first zucchini lasagna of the season, it was wonderful. 3 small zucchini sliced lengthwise, filled a 13x9 pan. Dinners for a few days.

Just finished my first round of zucchini relish, it is our favorite relish. Also made a batch of yellow squash pickles. Next up will be your zucchini bread jam which I made last year for Christmas gifts and it was a huge hit. I also dehydrated a bunch to add to soups and stews all winter.
I haven't had time to go through your zucchini recipe list, but one I use and my daughter loves is just slicing both green and yellow zukes, Slice or dice up an onion, Saute it for a minute or two in avocado oil, thin slice zucchinis, saute them for about 5 minutes, stirring and turning them to mix with onions, then I add a diced tomato and some garlic and stir in, then add about 1/2 c. milk. Turn burner down to low. Sprinkle any cheese on top (I prefer Havarti), cover and simmer for about 5 min. Eat

Zucchini bread alternatives favorite; Lemon poppyseed: Instead of usually seasoning (vanilla, cinnamon, ect) use…. 3 lemons worth of lemon zest Poppy seeds (dont need to use though) When its done make a powdered sugar glaze will milk and powder sugar and add lemon zest You can do this with oranges too. Sooooooooooooooooooooooo good! I also wanna try and make zucchini bread pancakes I made savory zucchini waffles too last year with onion tops, garlic and played around with adding different spices like turmeric, curry, chedder cheese, corn ect. All turned out great and you can freeze them and pop them in the toaster when you want them.
Rachel, here’s a little recipe I’ve enjoyed making with Zucchini: Zucchini Fritter 1 t Salt 2 large zucchini (Grated) 2 large eggs Chopped green onion 1 t Baking Powder 1/2 t Salt and pepper 1 Cup flour Pour salt on grated zucchini and set aside for 10 minutes so salt will draw out water. Squeeze out water from Zucchini and put in bowl. Add eggs, baking powder, salt, pepper, onions and flour. Put olive oil in pan and scoop out zucchini in balls. Flatten ball out and put in pan to sauté.

I haven't been able to grow squash. The vine borers and squash bugs are just entirely to bad here. I am taking a break this year in hopes that they will move on to someone else garden and forget about mine next year. LOL I am going to have to stock up at the farmers market and try these wonderful recipes you have.
When I have over grown zucchini, I have to peel it because the skins are SO tough we can't chew it. It saddens me to have to peel it because there are so many benefits in the skin. I see you just grate yours right up. You don't find it tough? Love all your zucchini video's. Thank you

I always peel it and remove seeds. I may try adding it to meatloaf or sloppy Joes or try one of your recipes, maybe the jam. I don't like zucchini. I blame it on a traumatized childhood with zucchini overload.. I have just started growing it again because the kids and the grandkids like it. I will give your playlist a try, add it and not tell anyone, see if my husband notices.

Whipporwill Holler has a wonderful zucchini au gratin recipe that is absolutely delicious! Lots of cheeses, but so good.
I use my kitchenaid grinder attachment instead of grating it is sooo quick and easy!

I dehydrate it in planks to use as lasagna noodles or cut with scissors and add to soup or pasta. I have trouble growing it for the squash beetles.
3rd summer. Short crop first year. Better last year. This year is heartbreaking. 1 zuke out of 5 plants.
I do planks for lasagna, chips with random spices, I do slices and make little mini pizzas my kids will actually eat it :)

I need this, I have zucchini coming out of my ears. Lol. I have already made 2 delicious squash cakes in the freezer. We have had it fried a couple time. Tomorrow I am grilling it. I plan on making 6 to 10 breads for the freezer. Now what. Lol...thanks
Love your channel. Ive saved your zucchini list to have. I want to try the pineapple. But have to get to reasonable farmers market or stand. Most are as expensive as the stores!!. I tried container gardening but flopped. We had so much rain and I have so much shade but will continue to cut my trees,back in one area ro try to get a small area that doesn't flood. I've been putting all my leaves where it floods and scraps from veggies. Thank y I u gor all your recipes and all the sharing you do. Many people won't share recipes!! I do, all but 1 a good friend gave me from her grandma and asked me not to share, so I have respected her wishes for over 50 years!! And will continue to. I have won many blue ribbons with her cake, although it fell the w st tine I made. That was an almost impossibility!! Lol! I'll give you any other recipe I have. 1 is a many time blue ribbon winner!! Love the garden and all your videos💕💕

We use a Julienne peeler on the really large zucchini to make spaghetti style noodles. We wrap the zucchini noodles, tomato sauce and veggies in aluminum foil and cook them on the grill when we don't want to hear up the house in the summer. This year I got a shredding blade for my food processor and it makes processing zucchini so much faster! We are shredding and freezing about 15 quarts of zucchini a week for use in cooking throughout the winter.

My favourite zucchini recipe is zucchini, lemon and ricotta tart. As I'm allergic to dairy I use a safe alternative. We also crumb and saute zucchini slices (lengthwise not rounds). I also dice some zucchini before freezing to use in the slow Cooker.
I always go to your zuchini recipes they are the best.
Another great use for zucchini is to use it in place of eggplant in a Greek dish called Moussaka! I have never had luck growing eggplant but I can grow zucchini like crazy! I just made some yesterday and it's almost gone already! I use ground beef instead of the traditional lamb and it is the best! Just food for thought!

I make zucchini brownies (low sugar) and it’s so much better than zucchini bread and that’s been one of our favorites for years.
I love to ferment them and hopefully this year I have time for relish.
I wish people would give me their extra zucchinis! I love to shred it to add to literally everything... meatloaf, anything with a red sauce (pasta sauce, chili, Italian sausage & peppers, etc), fried rice, chicken zucchini and feta pasta... the list goes on. I have a kiddo who is being super picky with vegetables right now, but she'll eat the shredded zucchini when I add it to meals.
Ball has a wet nuts recipe, so I would look at that for reference if you want to include nuts. I think it's called maple walnuts or something.

I like to take fresh zucchini slice it up thin saute it with onion and corn then add cheese into the pot and it's sooo good. My mother in law made it all the time for us and now I make it whenever I got some zucchini. All my plants died this year though they got eaten up by cucumber beetles 😔

When you posted this we were baking our first zucchini lasagna of the season, it was wonderful. 3 small zucchini sliced lengthwise, filled a 13x9 pan. Dinners for a few days.
Dehydrate it! Sauteed with onions, canning it in slices. It is very healthy.
I myself pickle, ferment, dehydrate, jam and saurkraut.
Zucchini sauerkraut? Any tips? Someday I will have a big enough harvest to prep all these things. Praying the seeds I start today will give me a second chance since my first planting had pollination issues and.now.bug attacks. Down 2 plants of 5. 😓
I make an apple dish as well I use it in a German potato (zuc) salad. As a diabetic, I'll find a way it work.
Rachel one year I didn't have enough cucumbers and I mix my cucumbers and my zucchini and made one of the best and called it everything relish

Just finished my first round of zucchini relish, it is our favorite relish. Also made a batch of yellow squash pickles. Next up will be your zucchini bread jam which I made last year for Christmas gifts and it was a huge hit. I also dehydrated a bunch to add to soups and stews all winter.
I haven't had time to go through your zucchini recipe list, but one I use and my daughter loves is just slicing both green and yellow zukes, Slice or dice up an onion, Saute it for a minute or two in avocado oil, thin slice zucchinis, saute them for about 5 minutes, stirring and turning them to mix with onions, then I add a diced tomato and some garlic and stir in, then add about 1/2 c. milk. Turn burner down to low. Sprinkle any cheese on top (I prefer Havarti), cover and simmer for about 5 min. Eat
For the first time I have SO MUCH zucchini coming out of the garden and I can only pan fry so much! Im having cabbage for breakfast in defiance haha 😂 I’m excited to check out your playlist!
Zucchini bread alternatives favorite;
Lemon poppyseed:
Instead of usually seasoning (vanilla, cinnamon, ect) use….
3 lemons worth of lemon zest
Poppy seeds (dont need to use though)
When its done make a powdered sugar glaze will milk and powder sugar and add lemon zest
You can do this with oranges too.

I made savory zucchini waffles too last year with onion tops, garlic and played around with adding different spices like turmeric, curry, chedder cheese, corn ect.
All turned out great and you can freeze them and pop them in the toaster when you want them.
Rachel, here’s a little recipe I’ve enjoyed making with Zucchini:
Zucchini Fritter
1 t Salt
2 large zucchini (Grated)
2 large eggs
Chopped green onion
1 t Baking Powder
1/2 t Salt and pepper
1 Cup flour
Pour salt on grated zucchini and set aside for 10 minutes so salt will draw out water.
Squeeze out water from Zucchini and put in bowl. Add eggs, baking powder, salt, pepper, onions and flour.
Put olive oil in pan and scoop out zucchini in balls. Flatten ball out and put in pan to sauté.
This sounds delicious! Thanks for sharing I can wait to try this! I can already envision serving them with eggs and a dill dressing! Dang it! Now I’m hungry!

I haven't been able to grow squash. The vine borers and squash bugs are just entirely to bad here. I am taking a break this year in hopes that they will move on to someone else garden and forget about mine next year. LOL I am going to have to stock up at the farmers market and try these wonderful recipes you have.

When I have over grown zucchini, I have to peel it because the skins are SO tough we can't chew it. It saddens me to have to peel it because there are so many benefits in the skin. I see you just grate yours right up. You don't find it tough? Love all your zucchini video's. Thank you
For most things we use it for, it's cooked down, and we've never noticed the skin - ever.

Zucchini is an important summer staple in my house too! And I can only bear to gift a small amount a year to friends and family because like you I grate and freeze to cook with later! I have two large freezer bags left from last summer (is winter here in Australia) so I’m off now to check out your Zucchini Jam recipe!

I always peel it and remove seeds. I may try adding it to meatloaf or sloppy Joes or try one of your recipes, maybe the jam. I don't like zucchini. I blame it on a traumatized childhood with zucchini overload.. I have just started growing it again because the kids and the grandkids like it. I will give your playlist a try, add it and not tell anyone, see if my husband notices.
I made your zuchini relish and omg. I’m on my 2 nd jar. I made 14 and I’m def making more. I also made your zuchini mock apple sauce. Another winner. I’ve water bathed canned shredded zuchini in apple juice. Wonder for recipes also
