Enchiladas Suizas
Ingredients
2 Shredded Chicken Breast
12-14 Corn Tortillas
10-12 Tomatillos
1/4 White Onion
1 Large Jalapeno or Serrano
1/2 Bunch of Fresh Cilantro
1 Garlic Clove
1 1/2 Cup Heavy Whipping Cream, Half and Half, Or Mexican Crema
2 Cups Chicken Broth
1 1/2 Tablespoons Chicken Bouillon
1-2 Tablespoons Butter
2-3 Tablespoons Sesame Seeds
Optional Nutmeg to taste
1 1/2 Cup Shredded Manchego Cheese
1 Cup Mozzarella or Munster Cheese
If your tomatillos are fresh you might get a more tart/sour taste if you combine it with Mexican Crema that's more like sour cream
If your tomatillos are large use less amount
If you don’t have the cheese suggested. Use a white melting cheese available to you. This will work with quest fresco as well and you know I have a simple recipe for you.
If you’re Allergic to Tomatillo try my other recipes. Of course, make sure to skip the tomatillo in the recipe.
