You should try it, it's really good.....there are actually a bunch of different versions depending on where in the world you are. I'm going to do the Puerto Rican version soon :) Someone also left in the comments that there is a version made out of chufa which I had to google lol but now that I know what it is I'd love to try it!

Let it steep for an hour or so and then blend it. The rice will be softer and easier to blend. You can even crush the rice in a mortar and pestle or use a coffee grinder or food processor if you happen to have one. You will get similar results with any of these. If you don't have any of them, you can soak the rice and cinnamon for about 20 hours with no grinding/blending. You will still get horchata it just won't be quite as milky. Now I'm off to check out your channel :)
Thanks Chris :) ........The taste depends a lot on the type of cinnamon that you use. The one that I used in this video kind of reminds me of red hots - the candy. If you used the cinnamon that you typically bake with or whatever you normally use for rice pudding then it will definitely have that same flavor. My husband was just telling me last night that someone he works with (an older Mexican woman) brought some homemade horchata into work and she left the rice in it so that you would drink it until you got down to the bottom and then eat the rice with a spoon. Obviously she didn't grind the cinnamon stick into it though lol. Anyway, I thought that was kind of cool. I plan to try it that way the next time that I make it. I think you would have to up the rice quite a bit though so that everyone would get some.....I don't know for sure, I've never had it or even seen it that way. Wow, I said a lot lol. Yes, it is real cinnamon, but it is a certain type. It's sometimes called "Mexican cinnamon" or "Ceylon cinnamon" or even "true cinnamon". It's a different type then what people typically bake with (in America) though which is "Saigon cinnamon" or "Vietnamese cinnamon" which is interesting because so many recipes originate in Europe where they use the "Ceylon" so we are getting a very different taste. There are actually hundreds of varieties of cinnamon though (only 4 commonly sold). The Ceylon (Canela) is what I used in this recipe and is what should be used in traditional Mexican recipes and really probably in most baked goods. I personally use the Saigon cinnamon most of the time when I bake even though I know it's maybe not what some would agree with but my American palate is used to it lol. For example, if you made cinnamon rolls and you wanted them to taste like you get at the mall(again in America), you would need to use the Saigon cinnamon. If you used Ceylon, they would have a different taste (like red hots or fireballs candy :). Not that that's a bad thing, they would just taste different :) But like I said in the video, you can use any kind that you want or even try making it in batches with a few different varieties - that would be a great way to really taste the difference in them if you wanted to :) There are also different health benefits and drawbacks in the different varieties.
