    Serves 4
    Syns per serving - FREE
    500g new potatoes, larger ones halved
    6 peppers (red, yellow or orange), deseeded and quartered
    Low-calorie cooking spray
    4 skinless and boneless chicken breasts
    10g fresh flat-leaf parsley, leaves finely chopped
    Zest and juice of 1 unwaxed lemon
    Preheat your oven to 200°C/fan 180°C/gas 6. Spread the potatoes and peppers on a large, non-stick baking tray. Spray with low-calorie cooking spray and roast for 30 minutes, turning halfway.
    Nestle the chicken breasts between the potatoes and peppers. Spray with low-calorie cooking spray and return to the oven for a further 25-30 minutes, or until the chicken is cooked through, and the potatoes and peppers are golden and caramelised.
    Meanwhile, mix together the parsley and lemon zest with a little salt. Once the chicken and veg are ready, scatter the parsley mixture over the chicken, then top with the lemon juice. Scoop the juices out of the pan and spoon them over the chicken. Serve straight away.

    No seasoning on the chicken at ALL before its cooked? Could have sprinkled with oregano, paprika??

    I like a lot of SW recipes but this looks bland as hell. Put a bit if garlic or chilli in there or something
