You cant really freeze paneer, you can freeze the masala and add paneer fresh when eating

I think this would be a perfect application for canned tomatoes if you have a good brand that you like the taste of

Ahhhh.... Have not been able to cook our fave indian food for months now because onions have been ridiculously overpriced for months now here in the Philippines.
Interesting - your use of paneer is much more akin to how tofu is used than "cheese"
