I‘ve just cooked the paneer Masala a few days ago & the black eyed beans with spicy onions today ☺️ loved both recipes & all the books so far but I find myself steering towards the healthy veggie one most 😄 If I may ask - if one has issues with bell peppers - which veggie would you opt for to replace them? Just stick to the tomatoes like in the book or do you have some recommendations? (I guess I‘d try aubergines or zucchini’s first ☺️) Thank you for all the deliciousness you share and have a lovely day!

certainly methi seeds are not a replacement for kasuri methi, but you definitely could substitute fresh methi leaves if you have them (or eat the dish with methi paratha or methi tepla if you have those)
I have two questions: 1. Do we use raw cashews or roasted cashews? 2. As it is winter here, tomatoes in stores have no flavor. Would you recommend using a small amount of tomato paste to the vegetables when you Sautee them?
They were raw cashews, and that's a great idea to add a little bit of paste. I have the same problem with tomatoes here during winter. I've used canned tomatoes in the past as well
I believe you can leave them out. It will change the consistency a bit though. I’ve made masalas both with and without cashews. The cashews seem to make it a bit thicker and smoother, but they aren’t essential.

125 grams paneer per serving is what I rely on.

I don't have an oven. So instead of roasting in the oven, can I pan fry them? Any substitute for amchur powder?

Use parchment paper instead of foil paper, and nothing will stick to it.
