I make carbonara similar to this and love it, but when I traveled to italy and tasted "real" carbonara I didn't like the real thing with parmesan. I really don't know why.
@Ernest Turner Exactly, some use parmesan or pecorino, you can have many types of bacon, some use garlic, some use olive oil, some separate the yolks some don't. But the principle is always the same. If a hamburger has chicken meat in it it' s still a hamburger.
You should drain that bacon fat! It's the ultimate heart attack receipe .. heart attack 10000% guaranteed. Also carbonara is not spicy and yet you added a ton of peppers
