How to Make a Breakfast Burrito!

Make this super easy and delicious breakfast burrito! Packed full of perfectly cooked potato bites, sauteed onions and farm fresh eggs!

Ingredients:
(base ingredients:)
3 large tortillas
1 lg russet potato, diced
1/2 lg white onion, diced
5-7 eggs
1 cup of shredded cheese, I used a fiesta blend
splash of heavy cream, or reg milk
salt and pepper to taste, garlic salt (optional)
sprinkling of cayenne pepper (a little goes a long way)
(optional add-ins:)
sausage, ham or bacon
sauteed bell peppers
hot sauce
Directions:
To a pan over medium high heat, add in a few pads of butter. Once the butter has melted, add in the diced potato as it will take the longest to cook. Sprinkle on about a half tsp of seasonings, such as garlic salt (or reg salt), black pepper and cayenne pepper. You can, of course, sprinkle on your own desired seasonings.
While that's cooking, to a bowl, add in the eggs and heavy cream. Mix until well combined.
After about five minutes, add in the diced onions. Once the onions are translucent, add in the egg mixture and turn the heat down to medium. The eggs won't take too long to cook.
Once the eggs are cooked, turn off the heat and add in the shredded cheese. The residual heat will melt the cheese.
To fill the burritos, grab a tortilla and add in a few scoops of the filling. Fold in the sides of the tortilla, flip over the opposite side to cover the filling and roll. Enjoy!
