I made the second recipe with the avocado, tomato, cheese and sriracha mayo, and it was the best tortilla fold I have ever tasted!

You can use lettuce if you don't have spinach. 🙂
Oh! BUT you want to make sure that it isn't subjected to the heat for very long, or else the lettuce will cook. You want the lettuce to still keep a little of it's crispiness. Unless, of course, you use kale. Kale is often cooked, but not other lettuces. Regular lettuce doesn't taste very good when it's cooked (IMO).
