I love making these and freezing them. They are a quick breakfast for Grandkids for the weekends. I have 15 grandkids and they take turns coming over. I also make waffles and pancakes and freeze them. It makes breakfast so much easier.

Omgosh Thank you for this video. I made these and they didn’t last a day in a half. I’m a stay at home mom and I don’t have the time to stop and make myself something to eat so I was just able to grab one put it in the microwave sit down with my Valentine salsa and a cup of coffee, I also had one late at night, my husband came home from work he was tired really wasn’t that hungry put a couple of them in the microwave for him he was in love. Woke up this morning my kids had already got them put them in the microwave took them to the room and we’re watching cartoons, my daughter grabbed a couple on her way to work. It felt so good because my husband also took some to work this morning actually took a couple of extra for some friends. It gave me that extra time just to sit down with a cup of coffee and relax before the day got started and not have to worry about what I was going to make for breakfast or for them to take as they were running out the door. I have been making these for probably 50 years. The only thing different I do is add bell pepper, onions, chili peppers to spice it up a bit. I’ve never added baking powder and I never heard of the glue. Thank you for those two things. I just made them tonight following your recipe exactly and they were delicious. Wow does the filling look amazing! I don’t have a large household but, I do love having burritos on hand and usually buy Evol green chili/egg and cheese to have in the freezer. While those are very good, I have to give this a try because there is nothing like homemade and making it comfortable for my house (ie: spice it up baby!). Thank you for sharing this!!

Yes! I love veganizing her recipes as well. They work great every time! Going to try either black salt and tofu scramble or chickpea flour mix for this one. The Ozo vegan black pepper bacon would work well with some Violife cheddar shreds as substitutes, too.

I have a texture thing and cook the meat and potato separately. Making the breakfast burritos ahead of time is a time saver when you have that busy morning and have to grab something and get out the door. Saved me many times when I and my son were hungry but running late. Great to see you and thanks for posting, sometimes I forget about making a few extra breakfast burritos and freezing them. This is great! I don't like cooking in the AM but have to eat to take meds. I'm not crazy about the grocery store offerings because of the high sodium content. This gives me some flexibility. You know the secret to eggcellent eggs. Low and slow, baby!

I love Breakfast Burritos w/ Pico DeGio & lots of lime. Pico DeGio has always been my #1 choice for Burritos & Tacos etc because it's fresh & crunchy. I use to make a big pickle jar of Pico DeGio for the week & we'd use it on everything you could use it lol.
I just made these last weekend for my dil who cannot have dairy. Texturally I don’t like everything cooked together so I make it hard on myself and cook it separately 😂 I used the smaller 8” tortillas, I got 20 out of 10 eggs 1 lb sausage cheese sautéed onion and Hatch chilis and diced tomatoes. If you’re on the fence about making these, do it!!!! So very easy to pop one in the microwave and get on the road!

I make 17 to 20 breakfast burritos every 2 weeks. Mornings husby takes to work or warms and eats on the way to work every day. We save lots of money and health. It's worth the little time to cook. Wrapped up storing in freezer in fine.
