Recipe Ingredients:
- 3-5 Cloves of Garlic
- 3 Stalks Green Onion
- 300g Eggplant
- 2 tsp Vegetable Oil
- 250g Minced Pork/Beef
- 1 Tbsp Chilli Bean Sauce (Toban Djan)
- 1 Tbsp Oyster Sauce
- 1 Tbsp Light Soy Sauce
- 1 Tbsp Dark Soy Sauce
- 2 tsp White/Black Pepper
- 2 tsp Sugar
- 2 tsp Sesame Oil

Instructions:
1. Dice garlic and spring onions. Cut the eggplant into thick long slices.
2. On a medium high heat pan, add in your minced meat. Stir until meat is brown, then add in garlic. Give it a few more stirs then add the bean sauce, oyster sauce, light soy sauce and dark soy sauce. Sprinkle some white pepper and some sugar. stir until combined. Add more of each condiment for taste or if you want it saucier.
3. Add in your eggplants, give it a stir then cover the pan to let it cook for around 10-15 mins.
4. Add in your spring onions and give it another stir. Drizzle sesame oil over the eggplant and give another few stirs.
5. Serve the eggplant with minced meat dish with a bowl of hot rice.
