- This week, we're faced with a very particular challenge, the likes of which I never thought I'd have to face: batter-fried chicken. It sounds innocuous enough, but a cursory glimpse at any given recipe eschews batter in favor of a sturdier, more reliable flour-and-egg dredge. Thanks to our new kitchen producer (Kendall Beach), we concocted a formula for batter that wouldn't bulk up, wouldn't brown too quickly, and wouldn't crack in the unforgiving oil. The results are annoyingly difficult but undeniably fantastic fried chicken, made in (what I imagine is) the Pollos Hermanos style!

For the spices being "more chilean", use a mix between chili flakes (between the 5000-8000 scoville units), smoked paprika and some coriander seeds, put them on a stove at low to mid heat for 5 minutes and grind them. You will get some "Merkén", which is a traditional chilean spice blend!

It's always a good idea to put spices on the stove in a dry skillet or in your case the oven for a little bit, it really helps release the aroma's.

In 2012, I actually ate at the restaurant that was rebranded as “Los Pollos Hermanos” for Breaking Bad. The restaurants real name was “twisters” and is about 8 minutes from the Albuquerque HardRock Casino. They didn’t serve fried chicken though, but they did still have the Los Pollos Hermanos painted Logo on the walls inside. The place was a burger diner with a southwestern “twist”. I was stationed at Kirkland AFB in ABQ at the time and I wonder if it’s still open. If so, they really, really should start serving spicy fried chicken.
There's a Pollos Hermanos food truck that was planning to start up in Santa Fe. Might be delayed because of the pandemic though.

@@Thedjsmokeybear the logo was added for the show. The restaurant was just a filming location; Los Pollos Hermanos was not a real restaurant at the time. Twister's was around for decades before Breaking Bad. All of Albuquerque has since incorporated BB references for tourism. You see artwork and such all over the place now.

what a friendly kind man it would be a shame if he turned out to be a ruthless drug lord
late to the party, but for those that are afraid of burning chicken/crust while frying....an old trick is to shallow fry them(oil only covers half the chicken; turn when one side is golden brown and repeat for the other side) on high heat, then turn the heat down to medium/medium-low so they simmer in the oil. you are assured that the chicken is done while also preventing a burned crust.

As someone who lives in Albuquerque (where they filmed breaking bad) it was so weird to see pollos hermanos cuz they used an actual local chain of burrito restaurants called twisters to film in. And they changed nothing about the restaurants except for the names. same interiors same menu boards same staff uniforms just fried chicken instead of burritos lol
