Today we are making duo jiao ji ding. Duo jiao means chopped chili sauce - a traditional Chinese ingredient. Once you made it, you gonna want to put it in everything. It is that good. Ji ding means diced chicken. So the name is pretty straight forward. This is also a Hunan style food. I call it “mom’s flavor” because I grew up with it.

INGREDIENTS FOR DUO JIAO
1.3 lb of red chilies
3.5 ounces of garlic
1 ounce of ginger
5-6 tbsp of salt
3 tbsp of sugar
INGREDIENTS FOR THE CHICKEN STIR FRY
1 lb of chicken breast
1.5 tbsp soy sauce

1/2 tbsp of the oil from the bean curd jar
1/4 tsp of baking soda
1 tsp of sugar
1/4 tsp of salt or to taste
3 tbsp of cooking oil
1 cup of celery

2.5 tsp of cornstarch +1/2 cup of water
