Classic Pulled Pork Sandwich | Vegan It! With Lauren Toyota

  • Chatelaine and Lauren Toyota have teamed up to put a vegan spin on the comfort foods you know and love. On this episode: a smoky, saucy and meatless “pulled pork” sammie.
    RECIPE: BBQ Pulled Porkless Sandwiches
    TASTES & TEXTURES: meaty, saucy, crunchy, sweet and sour
    MAKES 4 sandwiches
    PREP TIME 30 minutes
    COOK TIME 30 minutes
    PULLED “PORK” FILLING
    1 onion, thinly sliced (about 2 cups sliced)
    2 tablespoons vegetable oil
    10 oz cremini mushrooms roughly diced
    2 garlic cloves, minced
    1 cup marinated artichokes, roughly chopped
    1 teaspoon smoked paprika
    1 teaspoon ground mustard powder
    1 teaspoon sea salt
    1 teaspoon ground pepper
    ¼ cup tomato paste
    2 tablespoons soy sauce or gluten-free tamari
    1/3 cup packed brown sugar
    1 tablespoon apple cider vinegar
    CREAMY SLAW
    4 cups slaw
    1/3 cup vegan mayonnaise
    1 tablespoon Dijon mustard
    1 tablespoon apple cider vinegar
    ¼ teaspoon sea salt
    ¼ teaspoon ground pepper
    SANDWICHES
    4 multigrain burger buns
    2 dill pickles, thinly sliced
    Heat a large pan over medium high heat with vegetable oil. Once hot add the sliced onions and sauté for 5 minutes until softened and slightly browned.
    Add mushrooms and minced garlic and cook for another 3 to 4 minutes until most of the water from the mushrooms has evaporated.
    Add the roughly chopped artichokes and cook for 5 to 6 minutes, stirring occasionally.
    Add smoked paprika, ground mustard, sea salt, ground pepper, tomato paste, soy sauce, brown sugar, and apple cider vinegar and stir to combine well.
    Spread out the mixture into an even layer in the pan and cook for 15 more minutes only stirring once or twice. You’re trying to caramelize the mixture a little bit so don’t stir it too much. It will reduce and get much darker in colour. Serve immediately on lightly toasted buns. Top with slaw and pickle slices.

    I made this for dinner....so good. I said out loud, “oh my god”. Instead of a bun I just used butter lettuce...yummm

    Weirdly enough I had all the ingredients made a macaroni salad on the side and served this to my meat eating family. They LOOOOVED IT .

    this is such a nice different recipe! my boyfriend refuses to eat any sort of jackfruit pulled pork cause he doesn’t like jackfruit, so this is a wonderful alternative. i bet it tastes a lot more savory too, anything lauren makes looks absolutely mouth watering.

      Adriana Novelli make sure to use jackfruit in prine or water not in syrup, also if you shred it and then boil it in a salty water for 15-20 minutes and then drain and rinse it few times the weird flavor will go and then you can enjoy the great texture

      Adriana Novelli I can relate, I’ve tried bbq jackfruit once and it was the prepackaged stuff in the box. And I honestly didn’t like it. The texture was off, the sauce was watery and overall it wasn’t my thing. So I was really excited to find this.

    Definitely adding to next week's meal plan! FYI, if you haven't tried Lauren's crab cakes yet.... you simply must! Helped my meat eating family be more open to vegan cooking and now they are 95% plant based!

    Amazing!!! I was assuming it would be jackfruit and jack fruit fresh is a pain and canned jackfruit is so expensive and hard to find canned or fresh this is way easier and cheaper! Great idea!!

    King oyster mushrooms are a great substitute. You can pull it apart just like meat.

    As a life long vegetarian I have never had pulled pork but wanted to try this recipe as I need to add mushrooms in my diet. I halved this recipe in case it didn’t go well. This was delicious and next time I will make the full recipe. Also subbed Dijon mustard for dry mustard cuz that is what I had available.
    You, Lauren Toyota, are a magician.

    If you use oyster mushrooms you can cook them whole and then pull them to resemble pulled pork.

      I feel like oyster mushrooms in this way would make the "pulled pork" seem super fatty.

      Shaun Bailey isn't that kind of the point of pulled pork? Granted I haven't had it in years but I thought it was meant to be fatty.

      Ella L. You're welcome! I'm not sure if you watched the video but she actually uses cremini mushrooms and artichoke hearts, not jackfruit (though jackfruit is a hugely popular choice for pulled pork)

    Made these last night and they were BOMB DOT COM👌🏼 had to make a few substitutions because ofcourse I HAD to make it now and didnt have time to go to grocery store😜 (used normal artichokes in a can, yellow mustard in place of dry mustard, regular paprika and just added some liquid smoke)
    This is officially a household regular!

    I'm going to do something like this, but I think I'm going to try and use a cheese grater maybe to resemble strips for the mushrooms haha, we'll see. Love experimenting with my newly found vegan lifestyle!

    I think I'd like this better than jackfruit pulled pork. I like the taste of artichokes, not so much the taste of jackfruit, and I do love mushrooms!
