Hello Lidia, This soup has it all and so healthy. This will be Saturday dinnerr at our house. My husband says he doesn't like lentils....he'll be fooled here bc I'll throw in some gnocchi with crusty warm bread and he'll never notice, lol! Thanks so much. What an adorable interview! Good advice on the soup preparation….blending the bacon and aromatics first …then sautéing. I love making soups. I’m always looking for a way to create a deep taste.
Lidia: I made a big pot of this soup yesterday....it fed four of us and I had 4 quarts left over which we canned this morning. The recipe is hearty and delicious. We are looking forward to having it on occasion after we can the left overs in quart jars. Thank you...we are big fans. By the way, my wife's maiden name is Merendino...she is half Sicilian.
I’m so used to preparing lentils as Indian dal and dosas, so it’s nice to use them in a different cuisine with very different flavor profiles. One isn’t better than the other, and there is plenty of great nutrition in a bowl of lentils and beans, no matter how you spice it. Thanks for such a great recipe and for sharing grandma with us. She’s a gem!

Probably from the garden. Please see my note above. There is no point of putting dry, discolored ones. I bet it's from the garden. But bay leaves are in the "spice rack" of any store, not fresh, 😂
They are available at my local organic market and my local upscale store, the latter is a national chain. They do have a lovely aroma that’s different from dried bay leaves, but I don’t think it’s worth making a special trip just for fresh leaves. I store them in my freezer, and they keep well there.
