It is most important to maintain cleanliness for japanese sushi worker. so they always clean fish,knife,and cutting board. It makes sense to leave the water running. and Squid sashimi must be handled with special care as it contains parasites.

That’s not cruel at all, it’s just some basic biological knowledge that Western people you guys should know. It’s really delicious, trust me😂 seafood is part of some East Asia people’s life (I’m even not Japanese but Taiwanese)

The high salt content causes some nerves to fire. And due to the speed of preparation, there's still oxygen present so the muscles move. If you want a reference point for when the squid dies, then just look at its color. The pigmentation of the skin is directly controlled from the brain after all, and much more complex than just a few random impulses. Looks like the chef kills it in ~3 seconds from starting the cutting.

Seeing it stand up and try to run away but being unable to move and slowly dying as the chef prepared the body was honestly one of the more cruel things I've seen in food preparation. With squid, as soon as they turn white and stop all coordinated movement, it's dead, which is the first cut in this one. The uncoordinated movement here is residual nerve activity and a reaction to the sodium in the soy sauce.
