I find this recipe works best when the pears are thinly sliced. Made it tonight for a light dinner and it was absolutely delicious. Can't wait to make it again for lunch tomorrow :)
Delicious! My fav is brie on one side, crispy prosciutto, Granny Smith apple in the middle and a more firm melty cheese like Muenster. Salty, sweet, crunchy and creamy...heaven!
I recently convinced my dad to do this too with wine. I argued that unless your carrying your wine glass around there's no reason that you taking a sip between bites of dinner would 'warm up' the wine. that and I've never lost a whiskey glass, but dad has gone thru a dozen wine glasses in the past 10 years.
you know wine glasses are just a long inside joke. some french dude was like "hey we should play a prank on the italians and get them drunk out of a really fragile, unstable glass." hilarity ensued for hundreds of years.

Made this last night for a party! It was super fantastic and it when we ran out of Bosc pears I made some with some super delicious green apples! Just a really fantastic recipe. Crunchy tangy and sweet all at once. I really recommend it.

My favorite alternative grilled cheese is camembert cheese, roasted onion and carmelized apple on sourdough. Made that for a small French bakery in my home town but it was on a sourdough baguette instead so I decided to make it a grilled sandwich for myself at home

God, I love pears. I just bought one of each variety at the store to find out which is my favorite. My grandmother used to have a pear tree and she would make a version of this sandwich with cheddar and it was awesome.
I finally just made this. It was delicious. I would suggest throwing in some balsamic vinegar somehow. Either drizzle inside before cooking or dipping in some while eating. You are the Simon Bar Sinister of your balsamic vinegar (close enough). It really was fantastic.

I admire all CJ's recipes, but my favorite way to enjoy a good brie is plain-- but it has to be at the perfect stage of ripeness and served a few degrees cooler than room temperature. Ooo la la, que j'aime ça!

Me and my wife are having an argument because she thinks when you bit in to the Sandwich I did the same bite movement but I'm pretty sure I didn't haha.
I recommend adding some arugula near the end before you close the lid, just not too soon, otherwise it'll cook and taste kind of funky. I also sometimes put a dab of honey in mine. Oh and one more thing, I don't use standard sliced bread, I make mine on croissant rolls. I love this recipe though, it's always been a great recipe to throw together when I don't have a lot of time on my hands, but not when I don't have any thyme on my hands...

After I was done drooling about this, I remembered I did something with the pears once. On an inspired whim I got from nowhere (okay, maybe from muses on rollerskates), I sliced a bosc pear in half, sprinkled with freshly ground black pepper, and caramelized each open half in a pan of butter. It was heaven! Chef John, do you think it would be worth it to do this to the pear slices before adding them to this sandwich? ---je
