- Next time you've got a need for cheese, try Jacques Pépin's recipe for croque monsieur. This French bistro version of a sandwich classic is even simpler than an American grilled cheese. Instead of standing at the stove and flipping, this sandwich slides into the oven after assembly, baking at 350 degrees for about 10 minutes. A homey lunchtime favorite.

This man feels like a family member to me. It is always the little things with him that fascinate me like cutting the ham in half so the bread edge has a straight edge of ham. Watching him alone is like Christmas Day. Watching him and Julia together was liking having two Christmas days in one.
When he did that I just couldn't believe it. I couldn't help but start laughing with glee. For some reason it just makes me so happy. Then also like him just saying "things change" and snapping up a loose piece of ham in the same breath I was cracking up
Couldn’t agree more. Started watching him on local PBS as a newlywed and continued through all of his series since (especially his show with Julia), some several times now. He’s an enduring treasure. Highly recommend his book “The Apprentice” too!
Do this with your omelets. Semi circle omelet in an 8 inch pan, line up the right angle of the quarter circle with opposite bread corners. I do mine with cheese and jalapeño sauce.

My favorite thing is how casually he brings up old school definitions of things, like how a croque madam was just chicken and there was no egg involved. No spite, no bitterness.

Support public broadcasting without it we would have never have been introduced to a gem like Mr. Pepin.
Public broadcasting was the only place you could get cooking shows years ago. Jacque, Julia, Graham Ker, Jeff Smith, and others used to have shows.
Those days are long, long gone. Even with support of public broadcasting, no one cares about it, people are watching UA-cam and other apps and that is how it will be from now on.

I'm pretty sure he was just referring to using deli ham instead of chicken on a toasted sandwich, I don't think there was a deep metaphor to latch on to. 😂😂
He probably didn't want to insult anyone by saying it wasn't traditional or proper. I appreciate your observation of this little comment by Jacques...it shows his open-mindedness.
Fair enough you're right, it's open minded and incredibly deep.....this professional French chef who has probably cooked with hundreds of ingredients......having the ability to put deli sliced ham instead of chicken on a toasted sandwich...... incredible....🤣🤣

I didn't know about Chef Pepin until I saw something where Anthony Bourdain mentioned him. Now I watch/ listen to his videos to calm my brain. What a treasure I missed out on but it's been great getting to know him the last few years through these videos. 😊
Sounds like that you have a lot of catching up to do. He not only cooks, but he also does art work as well plus he has cook books out on the market for people to buy, enjoy, and learn from.😊

He's terrific. I just caught on a couple years ago as well, hehe. He was a chef for two French presidents, and invited to cook for the White House by Mrs Kennedy . .
Pépins book complete techniques is highly recommended. Reading is kind of difficult, you can tell it's translated from French, but he has really detailed photos.

Jacques is a national treasure. If I had to choose one celebrity chef to teach children to cook, it would be him. He's not bombastic, flamboyant, or edgy. He doesn't intimidate or posture. Instead, he conveys simplicity without dumbing-down the need for technique and good ingredients. He also does this FAST, in real time! But, his true magic comes from the way he weaves in the tradition, sentiment, and cultural significance of these foods. My mother is 92 and when she watches Jacques its as if she is watching a member of her own family. I wish we had more of this spiritual generosity in the programs we watch.

I totally love the lack of "Bam!!!!" or any of the other affectations so common with many people cooking for social media.
And the way he casually accepts that the Croque Madame has changed over the years...too many chefs have this ridiculous rigid thinking, that the first incarnation of a dish is the ONLY way it can ever be served, and here's this dude, a legit French gourmet chef, just casually brushing it off like "yeah, things change, whatever"...so much respect
@@ViperT24 I agree in principle, but what you suggest couldn't be an absolute in history. Ingredients change over time due to a variety of reasons. Cuisine would never evolve and we would be eating the same stuff today that they had centuries ago.

And took the broken piece of ham he took from the cutting board and ate it. Hand to mouth. Cant do that anymore! French Chefs were always my favorite Chefs to work for. They are not afraid to teach you everything they know. And they really know how to enjoy their off time!

So simple, yet once again I learned something new (cutting the ham for a straight edge). Loved how easily Jacques noted how things change over time when talking about Croque Madame and todays egg on top vs. the chicken filling he was familiar with from back in the day.

I made these with a soft fried egg in the centre and jam dip(for me) for hungover chefs on Sunday mornings, I never knew it was an actual recipe. 40 years later thanks to JP I realize they were humouring me

Mr Pepin is a beautiful man and I love watching him on UA-cam. What I didn’t know is the ham and cheese toasties my mum made every Sunday night was French bistro dining while we watched Bert Newton on New Faces down here in Australia in the early 80’s. I’m now 51 and still eating classical French cooking! 😂
A local restaurant served a croque madame. thicker bread slice, an open faced sandwich.gruyen and ham, with mustard with seeds , poached egg, and then I think bernaise sauce. Was a.great meal

The croque monsieurs that I ate in France were toasted like this, but there was a layer of bechamel and extra cheese on the top. So good!
I’ve gotten the bechamel version more often in Belgium than in France to be honest, but both are great in their own way. Crispy or creamy, just do what you like!
Croque monsieur is with bechamel. Thats how its always been, without it, it's a ham and cheese sandwich.

@Theseus9-cl7ol I do ok. Unfortunately I'm a disabled veteran so I can't really do any serious cooking anymore. My 26 year old son is my caregiver and I've been teaching him for nearly 20 years now and he's gotten very good. At this point I'm HIS sous chef. 🤭

Just came home from a 12h shift, all i wanted to see is a good man making a Croque Monsieur and i wish i had one right now.
He makes it the OG way. For the better part of the last quarter of a decade, croque monsieurs at most restaurants/cafes have had cheese melted on top.

This is interesting because every other croque I’ve seen made has béchamel or mornay sauce. I’m not doubting him but when I want a French grilled ham and cheese sandwich, I want it elevated. I just made a bunch for a brunch and everyone loved them. Spending time on the béchamel to make sure it’s creamy and correctly seasoned is really worth it. And comte is my favorite cheese in these. And I’ve been watching Jacque on public TV for over 30 years. I’ve learned a lot from him.
Looks like the original recipe was like that, cooked on a fire wood stove. That's not what most customer would expect to be served nowadays.
The béchamel version is good, but it's not something people often do at home, they usually eat it in a bistro.
Iron got a point:
i'll maybe eat croque-monsieur 50 time per year at home (kinda my péché mignon,tired -> it's fast,good and easy to make,litteraly 1minute).
If you make a bechamel at home,the time you take to make it is longer,it make a croque monsieur kinda to heavy,too rich for a little diner.(it's good,but with a salad one is kinda a complete meal on itself).
Also comté is a good choice of cheese for a croque monsieur,i would recommand you to try with abondance and cantal.

Addition by subtraction. It makes his Croque Monsieur better than others I've tried. Or any other cheese sandwich for that matter. As few ingredients as possible, and don't mess with it. And that holds true for for decades of his recipes I have made. His shows taught me how to cook. Started as a young man copying his recipes from a VCR. Now at old age, still coping his recipes from the internet. This still blows my mind.

I also use a little dijon mustard and also enjoy it with a little bechamel for a creamier and more moist sandwich. I also r3ecommend Grueyre for the cheese, it goes great with the ham.
