- Sweet and creamy, Camembert holds a special place in the heart of cheese lovers. The iconic cheese originated in the northern French region of Normandy, where it has been made for centuries. Today, France makes 360 million wheels of Camembert each year. We visited Le 5 Frères, a family-run farm in the village of Bermonville that makes Camembert following the traditional recipe using raw milk and ladles it into molds by hand.

"raw milk"
@@mounesimad8844 Yes, raw, meaning not pasteurized or otherwise treated. If not properly controlled, that can be a source of disease, which is why some countries ban it (and pregnant women are advised to avoid it)
@@olenickel6013 It's interesting to see that obsession with food hygiene can also be counterproductive. In some countries it's mandatory to wash eggs with cleaning products and that actually makes their shell more porous and prone to salmonella. *Laughs in Palpatine* : Ironic
@@olenickel6013 But raw milk is not a "source" of disease. Contaminated milk is a source of disease. There's nothing inherently dangerous about the milk itself, and contaminants can be avoided by proper cleaning and sanitation procedures followed by licensed cheese producers.
Also, there is at least one contaminant (Campylobacter) which is killed by the cheese making process itself.
Pasteurization does indeed kill any pathogens in the milk. However, once milk has been pasteurized, it is still vulnerable to contamination after that. Some argue that pasteurized milk is MORE vulnerable, since it lacks any competing microorganisms to fight the influx of pathogens.
I would not advise anyone to eat raw milk cheese that some dude just made in his garage or something. It must be properly handled. But commercially produced raw milk cheese is perfectly safe. I've eaten it every day for years. My wife ate it when she was pregnant. You're more likely to get food borne illness from leafy greens, root vegetables, and cut melon than from a cheese.

I’ve made Camembert for a few years in Canada using raw milk from the Amish. Jersey cows so more fat. Grass pasture, hay in winter, all organic. Imported the cultures from France. I sold some French angora rabbits to recent French immigrants in Montreal. Sent them a wheel of it. They aged it and said it was the best they’d had. Certainly better than store bought. It’s getting good milk that is so important. Quebec allows raw milk cheeses here in Canada and I believe Saskatchewan now as well.
I can't get hold of raw milk but in recent years, a milk has become available that's 'pasteurised' without heat (cold pressing). Knowing it's the high temps in pasteurisation that compromises the protein structure, I thought I would try it to make camemberts earlier this year. OMG. I tried one at a family gathering early this month and it was the best I've tasted. Unfortunately, everyone else thought the same so I gave the rest away. No matter, another batch is in progress.

As a French cheese eater, a lot of "french cheese" are industrial and not very good. I know that imported cheese are too expensive (can't imagine what it costs in Australia), but if you like it and have the possibility to taste it, try some "fromages fermiers" (farmer cheese). They are handmade, a bit more expensive, but nothing to do with the others, because they are made with time, patience and love ^^
