I used a " sofrito" mix of onion, green bell peppers, dry Oregano Leaves & garlic. Do not like the taste of Thyme leaves guess the amount to use. All above ingredients are chopped fine or grined in the blender. Sautéed it in 3 tsp of coconur oil, for about 2-3 mts. Add red beans, coconut milk, ( rinse the can red beans good with some water) or water from the boiled beans, (it gives the rice a nice color). grounded Black Pepper, salt to raste & about 1/4 spoon ground allspice. Stirr well. Add rice. Cant get those nice peppers here. They don't have the nice bonnet peppers with thar unique flavor Bring to a boil. Lower cooking temperature. Then check for doneness in abour 20 minutes. if not done then continue to cook until done. obviously I mentioned the ingredients & not the complete cooking instructions. But you pros could figure it out.

Where is the reddish color from the beans. You threw it out. Now your rice is white as the coconut milk. No your rice should have the color of the beans.
