This is hands down the best rice and peas I've ever made and tasted. This is the first time I've ever attempted to make rice and peas on my own. I usually buy it but I just woke up one day and said to myself "let me try". The brown sugar threw me off at first but I still followed this recipe to the T. And OMG I'm not buying out again. I can make it now. This recipe is hands down my favorite. Thank you
I have never heard of Sugar in rice and peas. Guess my granny on both sides missed the memo. I dread adding sugar to any Jamaican dishes except baking. I like your videos. Except for sugar in rice and peas. Respect to your craft. 😂. Also, I have watched you from the beginning Sir. You have evolved. Thank you for your videos. I have forwarded them to my friend who cannot cook. Go's bless
Greetings. I recently discovered your channel after looking for authentic Jamaican food cooking chefs, and there you were, sir! Love your recipes. Also, knowing that you were on a health kick to bulk up, your regime appears to have worked. You look healthy and fit. Must be all that home cooking!!😊Well done!
There are two ways of doing R n P in our family we use gongo peas or black eye peas not red beans, I have not come across using sugar in Rn P but as diabetic I will on it pass. We use coconut milk or cream and clove when we do the dish as well as cinnamon ground.
Thanks 4 video. I have made rice n peas with canned peas before, but tried your version of blending up some of the peas first with coconut milk and it came out perfect. Best one yet. I'll stick to this method everytime. Thanks Morris ❤❤
I just got recipe from a friend & was dreading soaking peas and liking using canned peas better. I got things do to and want to make peas and rice quickly plus I'm lazy😂
Good day Mr. Morris, Love it thank you i'm Asian and 1st time to eat Jamaican food rice and oxtails with butter beans so here i am found ur videos how to cook them i will cook for sure for my family.
That's smart, my family is from the south and we are creloe, we do kidney beans from scratch too but sometimes I wanna grab a can or 2 😂 my daughters father is belizean so I had to learn how to cook like a creole/Caribbean which isn't too far off, different ingredients by far but alike in many ways, belizean and jamaican are similar as well all super yummy if done right and this looks soo good and a nice short cut with the beans gotta try this😊
Listen: THIS A GWAN RIGHT HERE !!!! My family didn’t know any difference - shared this hack with my kids - my Mom would spend the whole Sunday morning making rice and peas - always looked intimidating to me - wooow - this gave me confidence 🤣Thank you
Never added sugar to my rice and peas this way but i guess I'm going to try this method but always add a little tusp of sugar in my rice and peas. Thanks Hawt Chef
Ho wow chef definitely taking the blended peas part i cook it just like this except blending the peas and burning the sugar so i am definitely taking that method lol 😂 thank u i trust whatever u do because u teach me to fry dumplings
What’s the brand of your pot. You are the best Jamaican chef I see so far. Love you fried dumplings. Love the video where your went home for the first time and fell in the giant pot wholes.
Mannnnnn this looks absolutely delicious. 🤤🤤🤤🤤🤤🤤🤤 I’ve always wanted to make Jamaican Rice & Peas and with this recipe I definitely will. Thank you for sharing! 🙏🏿🫵🏿💪🏿💪🏿💪🏿👊🏿👊🏿👊🏿
@IcilmaBrooks - It's so true about Barbados 🇧🇧, I grew up seeing this and i do it too. A little sugar balances out the flavour of any acidity or salt, and enhances the flavour!
Neva heard bout brown sugar inna rice and peas😮remember that rice is starch turns into sugar 😌chef can you please do rice and peas with quinoa instead of rice🙏🏽
I just made this and I think I did something wrong. I think the water cook down too fast and then at the last step when you supposed to reduce the fire and let it cook more. I had to reduce the time because the bottom of the pot had some rice burning so I wind up turning off the fire and fluff up the rice and then take the lid off and just let it air dry a little but I will definitely try it again until I perfect it. Thanks for the recipe I appreciate it
Instead of the brown sugar i used a little coconut cream along with the coconut milk and it was heavenly...not for colour but for taste. Color of the dish was still on point. Thanks for the recipe nonetheless
Thanks for the rice and peas short cut info. I have questions, first, when and why did sugar start to be added to rice and peas? Last, when and why are habanero peppers being called "Scotch Bonnet"? Your channel isn't the only one to call Habanero pepper Scotch Bonnet. I just don't know why?🤷
@@PM-hx1ds Interesting, first time I ever heard that. I always thought Scotch Bonnet was a specific variety. 🤔 Hmmm, then shouldn't whatever generic be just called pepper, green pepper, red pepper, etc? 🤷
@@QuestionEverything-qp6kw I don't know of any other name and for more context; Jamaica have people that came from just about every known eastern country hence why we would often have a variety of names for one thing.
TIP- if your sensitive to beans, never use the liquid in the can and rinse them before using .. works everytime for me.
What RUBBISH
If you rinse them your rice will have no colour.
Bro do oxs tail video
@@slimthickaz.yes they will🤨
@@jeanpier5054Why are you calling it rubbish? Very disrespectful

Girl sugar going into evertthing nowadays. Even local restaueants admit to customers that thry add this to foods
Yes. I do use sugar in my rice and peas depending on the flavor from the grated coconut. Some coconuts are not as sweet
It's the 1st I am learning that sugar is added to rice and peas! I know you can add a bit of ginger
Yes man add a little sugar to it sweet fi days

In Trinidad, the brown sugar is "burnt" to give the pelau and/or rice and peas "color".
Rice and peas looks yummy 😋

I Just Tried Using kidney Beans In The Can A Few Ago, Just To See How It Would Come Out! Turned Out Great! One Of My Favorite Dishes To Cook!
I certainly appreciate that tip when you use can peas trying to achieve that authentic look and texture in the rice and peas..
Just recently I tried canned bean (peas) for the 1st time and was disappointed with the lack of redness on the rice. Will try this way, thanks

Can I leave out the sugar?
Use a little browning instead
Is there anything I can use besides coconut milk, I’m allergic but want to make this??
Oh so sorry. You can try milk, whole milk to get a little of the fat content and creaminess.
