      Nothing I wrote is critism oi showed the weight of the things he used, what's wrong with that. His formula is based on 1/2 lb.

    Just a suggestion. I think you should get all your ingredients together before you start. You take too much time talking....ride and whistle.

      He is criticizing other people but he's so disorganized, everything should be laid out before he starts to work. I add sifted breadcrumbs to my fruit cake, the zest takes out the rawness from the eggs 🥚

    I made my cakes yesterday. I use my Grandma's recipe. No salt, almond, lemon, browning or baking powder. If you use Billingtons dark sugar, no browning needed. The eggs makes the cake raise. Our cakes are lush and loved by family and friends in America and the Caribbean. We also put baking paper around the sides of the baking tin. NEVER HEARD OF CRACKERS IN CAKE OR BREAD😜. That's not original. The spoon should be able to stand up in the cake without falling.

    Once you put the flour in don't use the whisk,fold use a spoon. Don't over mix it the cake will split or fall.

      I am not critical, but personally, I think you over beat the cake batter. The mixture was too watery. At school, we were told to use the spoon method eg. how the batter fall off the spoon to get the right consistency. At the end, the alcohol just stayed on the surface of the cake. I believe it was due to the fact that the cake structure was too soggy.
      Life is all about sharing and learning from each other.

    That's your preferable color and that's ok. The darkness of mixture is the reason it's called black Cake. Yes ! Sometimes I think it's really too black but you have to have a balance 💕🙏. This is a simple tutorial.

    Thank you chef Ricardo. Our culture and cooking skills should not be lost to our youngsters in todays society. I’m sure many of us reading this comment, will agree that our parents never measured anything when seasoning, cooking or baking. Furthermore, it’s good to see different variants of Caribbean cooking and that we can all learn and enhance our skills in the kitchen. The video was a long and words and phrases being repeated, but I’m sure you wanted to show us all the necessary steps. However, it’s good to see you doing this online for many viewers to see in many years to come.

    I prepared my cake with all the same ingredients, excluding the liquid lemon zest and it came out very moist and lovely. I used burn sugar substitute for browning. Thank you for sharing.

    Trinidad fruit cake recipe..very different,we use one pound measure in everything..one pound in each kind of fruit..one pound butter..you didn't use enough fruits.

    I ladder a bit of butter into pan , ladder the pan with butter,then flour it, then turn the pan upside down and shake out the unwanted flour and then pour my cake mixer , it’s comes great the same .

    Thanks very much for sharing and welldone. However, I think if you had probably assembled all your ingredients before you started, you wouldn't look quite disorganised looking for things like baking powder and the browning (I think that was caramelised brown sugar, not brown food colour), while you keep your viewers waiting. Thanks again.

    Very good chef Ricardo, one suggestion the best vanilla Jamaicans used in this recipe is Benjamin's that's what i used in my fruit cake for years

    He should have gathered all ingredients first. Then measure and sift dry ingredients and set aside. Depending on the size and shape of pans( depends on how many cakes for the flour) he should then grease pans and line with paper. He can now start the mixing process.

    Yes crushed crackers and or bread crumbs can be used in Christmas cakes and is just as good. And yes a lot of us are bakers and have been baking with our grandmothers from we were small.

      If you use molasses, use the one which is low in sulphur, 8t won't darken the cake as browning would

      Me too...Don't think he should have poured liquid on the cake that just bake. That is for cake you have getting dry and want to moistened.

    There is a simple way to cut the paper and fold the paper like you’re making a arrow measure it from the middle of the pan to the end of the pan and cut off excess

    Butter don't measure by cup it measure by the pound when you are baking

      As he mentioned in the beginning some people don't really understand how to covert ounces to grams or visa versa so he was trying to make it simpler..... later on he did mention that whatever measurement you use, the butter, sugar and sugar should be the same quantity
