Every recipe is a winner Tess. I'm Italian and my mom use to make potatoes, onions and eggs. She would fry the onions and sliced boiled potatoes and the add beaten eggs for one dish. Sometimes she would make it with onions and Italian peppers and sometimes with all three.🙂🙂🙂

In India this is called Potato Fry. The only difference is that we use extra Indian spices and curry leaves with no onions and peppers. But I am definitely gonna try this recipe too. It's really mouth watering 🤤😋

I made this with jalapenos instead of bell pepper. (and yeah, i left the seeds in!) :D.....ALSO, i had a tomato, so i diced it up and added it too. the tomato basically disintegrated, and the potatoes absorbed all the tomatoey juice that formed. CAME OUT AMAZING!!!

    BURP...
    Excusez-moi !
I just finished making and eating this dish. I should have followed the instructions a little closer. I waited a little too long to throw the onions and peppers in and ended up having to cook the potatoes too long. My wife enjoyed it! That's what counts. Happy wife....
    Merci mon ami

Use red potatoes.Bake them, then put them in the fridge over night. Leave the skin on! Chop them and fry in peanut oil on high heat and stir for a couple min. Then put the chopped bell peppers and onions in and stir. Lower heat.
Use lots of paprika and black pepper. A little salt too.

Well...your recipe made it look fairly easy and short cooking time. When I made this it took a lot longer for the potatoes to get tender. Hot work. They tasted good BUT I'll go back to my mother's way....much quicker. She pre boiled her potatoes the day before. The next night she sauteed onions and peppers half way then added in the cut up cold boiled taters. Soooo much less time spent getting sweaty waiting for it to be done. Thanks anyway. 😊

I’d recommend using avocado oil since it’s high heat and healthy too!

    • @nmpoy

to the potatoes? just chop the back up into small pieces and throw it in at the end since it’s already cooked. or add the raw chopped bacon after the potatoes to let it cook. either way your prefer
