Great recipe. I make my home fries exactly the same way minus the achoite. I also cut the time down in half by using boiled potatoes. I sometimes boil them the night before. I started doing this with my leftover potatoes from dinner the night before. Great job!

Today with this snowstorm in NYC is the best time to make and eat home fries, I actually boil my potatoes a bit before I put in a saucepan almost done, new subby 🙌!!!

A long time ago (before the internet), I tried making them at home a couple of times but I wasn't successful. Since viewing your video 3 months ago, I have made home fries 3 times. It tastes just the way I like them!! I can eat the whole pan by myself! I'm making another batch today. Bendiciones P.S. An added tip: I put the potatoes in the microwave to cook half way before putting them in the pan. This cuts down on the cooking time.

This looks like a great recipe, I'm just not a huge fan of wet homefries. I may try this one some time where I cook the veggies separately from the potatoes and re-add them near the end of cooking when they spuds are crisp and dry. That way, I can cook those veggies down to reduce more of their moisture while hopefully getting some of that delicious caramelization on them too. If anyone else is thinking of trying this method, you could steam or even microwave your halved potatoes and then cool them in the fridge before starting. Once they come out, they'll be A) Cold so that they cut and crisp up so much better and B) The steaming partially cooks them so the inside is fluffy and fully cooked through. I often end up with my homefries burnt on the outside and undercooked on the inside if I toss the cut potato in wholesale, I'm guessing the moisture from this videos recipe helps steam them as they cook alongside the wet veggies.
This is one of my favorite comfort foods. The ingredients you use look so delicious. Can't wait to make it soon! Plus, I like that you didn't boil the potatoes first as I've seen other channels do.

I am thoroughly impressed-came across this video after seeking solutions for a potato 'break-down' dilemma. Each time I make home fries, my potatoes seem to disintegrate, turning almost ''mashed'' after just a few minutes.Gonna try cooking the onions and peppers FIRST, hoping to avoid the inevitable break down of my potates...I'll be back for more culinary tips and incredible entertainment with the 'Freakin Rican'!!
You make me miss NY. This is very similar to how I make home fries. Similar ingredients... However, I cook mine in a cast iron skillet. If you haven't ever cooked potatoes in cast iron, you really must try it! It makes it get crunchy bits on the edges. Just be careful you don't get the pan hotter than a medium flame. You can also slide the skillet completely in the oven for the final crisping.

Bacon and cheese! The poutine of home fries. I like home fries with Mediterranean zaatar spices, sliced mushrooms and a yellow onion. The sumac in zaatar has an amazing flavour. Dried rosemary crushed with mortar and pestle just before putting it in the pan makes it beautifully fragrant!
