Thanks! It shows you cook from the heart. I only recently had to learn how to cook, as my deceased spouse did ALL of the cooking. At 62, I have had to learn how to cook for my 80 y.o. mom. Simple and accessible dishes have been the most difficult because I work about 60 hours per week. Cooking has become a way to release stress, and receive rewards. I am glad to be able to support you with this. Hope you always have great food for your loved ones.

Whenever we have new potatoes for dinner I set some aside with a knob of butter and let them cool overnight in the fridge. Slicing and frying them with onions in the morning and serving with a fried egg is the best breakfast. I learned this when working in Germany where it's called Bratkartoffeln. Nice to see this variation.

Your potatoes are making my mouth water! For dinner, sometimes I add cut up Kielbasa sausage to my potatoes and onions for an easy one pan meal. I can't wait to try your recipe, I really like thyme and never thought about add it to this recipe. I also have a problem with my onions burning and I can see by your video that I am adding them much too early. Thanks for the recipe!
