    I'm from Alabama. We make these in a cast iron skillet, and add some bell pepper, instead of the powder (paprika) and maybe a dash of cayenne, and some cubed ham or crumbled bacon. Scramble some eggs = killer breakfast! Great channel, cher!

    This recipe IS delicious. I've been making potatoes this way for 45 years, but, I leave the skins on because that's where the vitamins are. You can also put this recipe in the oven and top with shredded sharp cheddar that gets a golden, crusty top. Awesome! Or, you can top with a little sour cream & chives. Russets and baby reds are my two favorite potatoes. Well, I must say I DO love a baked sweet potato with butter on top. Yummy!. Thanks for all the delicious recipes from a long time subscriber! Having grown up in South Florida, my family has been eating your recipes for decades. You do a wonderful job in the prep, cooking, garnishing and presentation. You do that so well I can smell the aromas of great food. You are a wonderful cook. Thanks for bringing back my childhood!

      I leave the skins on too. But I boil the potatoes first and cube and fry. The skins are delicious when they crisp up on their own.

    This is how my mom prepared potatoes while I was growing up and I had forgotten about them because during my working years there didn't seem to be time to cook at home we were so busy. Thank you for reminding me. When I prepare them I think I will add some fresh garlic being careful not to burn it. God bless you!

      Evelyn I have made the potatoes for so many years I like bell pepper and onion,I can't do a lot of spices but do a little garlic and when I know they r done I purposely turn the heat up we like a little crusty on the bottom of potatoes so good anytime of the day

    11 months later I finally made this exact recipe and loved it with one exception. I dropped the sliced potatoes in already boiling water for exactly 10 minutes, drain the water then cooked for only 3 minutes. I microwaved two Bar S Polish Sausages for 2 minutes and cut them up and dropped them in. Thank goodness I live alone and don't have to share them with anyone.

      I sliced the potatoes and then put them into the microwave for about 4 minutes, and then fried them, it worked for me. ( Too lazy to parboil )

    These are our favorite potatoes and I have been making them for decades for my family. We eat them for more than just breakfast. If you really want to kick them up a notch, especially for breakfast, Fry them up in bacon grease and add in some crumbled cooked bacon along with the onion, some diced bell pepper, and some diced jalapenos. I have also been known to add a bit of salsa and extra cilantro just before serving. It is fantastic. Thanks for sharing your version, I think the addition of the Cajun seasoning is a marvelous idea and I may try that. Thank you and may Blessings to you always.

    OMG!.They are so delicious! My German Bauernfruehstueck is very similar and has been my favorite for more than 60 years but these have now become my to go to skillet potatoes dish. The chicken broth makes all the difference in the world. Since I have become Vegan (WFPB) I eat these potatoes every day with different additional vegetables. My favorite is the addition of Shitake mushrooms and spinach. Another one I made with lots of different colors bell peppers and asparagus, another one with green and yellow squash, etc., etc. I am adding more and more different vegetables, and the beauty of it is that the chicken broth takes on the flavor of the vegetables you add to it and it tastes different each and every time.     This is a go to meal & breakfast, can be made with so many different spices and seasonings and topping wonderful!! I have had fried potato's like this added cheese, eggs, parsley,vegetables the list go's on keep showing this added, with because some my not know love it!!! Back then in the day! and now!

    My mother cooked the potatoes and onions, with black pepper and salt, and a little water. It was delicious. The way you have cooked with the difference spices it looks so delicious. I love the spice's. Must have a go . Yummy

    I make my potatoes similar, I grew up eating them this way. I see so many recipes where they have you boil the potatoes first, I prefer this method. Great job!

    This has become one of my favourite breakfast dishes. Sometimes I add shredded cabbage as well as the onion but however it’s cooked it always turns out great. A couple of fried eggs are a great addition to get extra protein but it’s a great breakfast whatever. Nice to have another vegetarian breakfast option and the spice is a great morning kick! Great video and very clear instructions. More vegetarian meals would be great 🌿. Thanks from England, UK.

    Tried these today- Quite good and pretty easy to make. Used one of those mandolin things to slice the potatoes thin, which made things even a bit quicker I think. Seasoning was perfect (though one person thought she would cut down on the teaspoon of cajon spice---but to me that was needed). A keeper of a recipe. Thanks!

    Great recipe! I've made this many times and have changed it up with a meat but honestly I feel keeping it simple is better. In a pinch I have made this like hash browns in a giant skillet. When the potatoes were done we parted them to make a doughnut hole in the center and added in eggs to scramble in the same pan then mixed it all together. Very easy and only one pan to clean.

    i made this today. I tweaked your recipe a bit. I started with bacon grease. I also mixed up the spices in a bowl and then sprinkled them over the potatoes. I would add the salt sparingly. Some Cajun seaoning have salt already in wich case the 1tsp of additional salt might be too much. I didn't want the potatoes to break up so i cooked the potatoes on low heat until cooked through and then turned up the heat to crisp up the bottom. It really was very very good.

    Pretty good, here are some tips to bring this recipe to another level: put less potato slices into your skillet, if they stick together, separate them so the single slices catch more heat more evenly. If you want to prepare a larger amount for more people, do several rounds and cook the potatoes in 2 to 3 portions, so they all get a nice color. If the pan is too full, some will roast fine and some will just stay pale. Believe me, it's worth the effort and extra time. Do not stir so much, just let the slices rest for a couple of moments before you give them a stir so they get roasted golden brown with a nice crust, but watch out not to burn them so they get too crunchy or even charred...stick around and do not get distracted. :-) Chop the onions a bit finer so they blend in with the potatoes and caramelize nicely until they are light brown. And last but not least, use fresh garlic and parsley instead of dried and powdered...more flavor guarateed. Try out these little alterations, folks, and turn the magic of a Mercedes into a Ferrari. ;-) Happy cooking.

      Pretty good? Right. There’s always someone who wants to take the steam out of another’s efforts. Among other occupations I have been a restaurant owner and chef for many years. The snarky edge to your “suggestions” for this woman’s recipe was cringe worthy. If you want to put up your own channel then do so and stop glomming on while trying to degrading someone else’s cooking skills. Maybe she doesn’t have time to make these potatoes in shifts as you suggested. As for the rest of your creepy, superior-toned corrections: They were insulting and impolite at best. As for, “turn your Mercedes into a Ferrari”, you should make an effort to control your impulse to downgrade another’s efforts and mind your own kitchen and business. The technique she used by adding a bit of stock to the potatoes would be adequate to tenderize them. Do something constructive rather than destructive. You probably won’t though.

      She covered the pot and steamed it with water for five minutes. Then she stirred some more. That would do it.
