My grandmother used to make chow chow, but she also put almost as much cabbage as green tomatoes. Otherwise, same process. We ate it over dry beans we had cook up, and my personal favorite was on 2 slices of bread, chow chow sandwich.
Green tomato jam - 4 cups chopped green tomatoes, 4 cups sugar, 2tbs. Lemon juice and a 6 oz. Box of your favorite jello. Combine the first 3 ingredients and bring to boil. Simmer for 20 minutes. Remove from heat. Mix in jello and ladle into hot sterile jars. Water bath can for 15 minutes. It’s delicious!
Ok, I’m sold!! I need a food processor that can chop!! I hand diced my tomatoes. Thankfully my daughter and my granddaughter assisted. Still, it took us 4 - 5 hours. 🤦🏽♀️
You can fry them in cornmeal. Slice the green tomatoes across and place them on a paper towel to let most of the water drain out. Then pat them dry, using a mixture of 1 beaten egg and a cup of buttermilk you dredge them in the egg and buttermilk and then into the cornmeal, In a skillet put about 1/2 inch of oil, heat to about 300- 350F gently lay them in the oil, in about 3 to 4 minutes turn them over the meal should be golden brown, and let them cook another 3 to 4 minutes, Place on a paper towel to drain off the excess oil and serve. Hummmm GooooooooD
I also add cauliflower tO mine. That 1870 Homestead uses green tomato in salsa verde. What about using the brine as a starter of a chicken or pork marinade.
The best rust remover is from the auto store. Get radiator (cooling system) cleaner and a soft wire brush. Use full strength and repeat as needed. Rinse and clean thoroughly with soap and water. I noticed you didn't use any spice for seasoning.

Green tomato bread is delicious! You make it like zucchini bread. I put pecans and raisins in mine, and it freezes really well.
Throw it (the brine) over some boiled eggs in a jar (pickled/preserved eggs), green eggs!
