As a member and representative of the white community i would like to state that this guy is no longer allowed in our community due to the depressing circumstances of how he only uses salt and pepper on chicken

Bro if ypur spice rub is burning you're using too high heat, I hit my chicken with adobo, coriander, cumin, garlic and onion powder, and some ground mustard to help blend it all together and it is always golden brown, crispy and actually tastes like something
You can use literally any heat and the spices will burn before the chicken gets any colour, the temperature required to get a Maillard reaction is higher than the burning point of the spices
The chicken will already taste like something....CHICKEN.

@@sujin27 if your seasonings aren’t burning then you’re not getting a sear on the chicken
@@dantethunderstone2118 if a sear to you is caramelization of the sugars then i do, lots of seasonings have the same amounts of sugars as the meat. you do not have to cook at one tempature as well, for me i get the color i like and then turn it down and let it cook the rest

Why are you not using flaky salt
Flaky salt is for finishing only. The crunchiness provides contrast to texture. Sprinkling it over wet moist chicken would be useless since it.. dissolves just like regular table salt.
