This is How You Make Perfectly Cooked Chicken Breasts

  • Cooking perfect chicken breasts can be challenging but I’ve got an absolutely fool proof procedure that I’ve been using for years and it works every single time.
    Understanding cooking techniques are the fundamental most important things when it comes to cooking and perfectly pan roasting this chicken falls under that umbrella.
    Ingredients for this Recipe:
    2 7-9 ounce boneless skinless chicken breasts
    2 tablespoons olive oil
    ½ peeled small diced shallot
    2 finely minced cloves of garlic
    ¼ cup chardonnay wine
    2 cups chicken stock
    1 tablespoon unsalted butter
    1 teaspoon finely minced fresh thyme
    sea salt and pepper to taste
    Serves 2
    Prep Time: 5 minutes
    Cook Time: 15 minutes
    Rest Time: 4 minutes
    Procedures:
    1. Preheat the oven to 375°.
    2. Season the chicken breasts on both sides with salt and pepper.
    3. Next, add a large frying pan to a burner over high heat and let sit for :20 to :30 seconds before adding in the olive oil.
    4. Once the oil begins to lightly smoke add in the chicken breasts and immediately turn the heat down to medium-high. Note: If it is a hot burner then turn it down to medium.
    5. Cook the chicken breasts in between 3 ½ to 4 minutes. Flip it over and add to the oven and cook for 10-12 minutes at 375°.
    6. Remove from the oven and let rest on a cutting board for 2 to 4 minutes, it’s ok if it’s a few minutes longer.
    7. Next, add the pan back to the cook top over medium heat and add in the shallots and garlic and saute for 2 to 3 minutes.
    8. Deglaze with optional white wine and cook until it is almost completely absorbed.
    9. Pour in the chicken stock and cook on high heat for 2 to 3 minutes.
    10. Finish with butter, thyme, salt and pepper.
    11. Serve the chicken with the pan sauce.
    CHEF NOTES:
    • I like to use either cast iron pans or stainless-steel pans since they are environmentally friendly and don’t give off any funky chemicals.
    • It’s important to buy chicken breasts between 7 and 9 ounces in weight. Large 1-pound chicken breasts are not normal, and you should caution using them.
    • Remember that just because food is removed from the heat, it does not stop cooking. Always add 1 to 2 minutes into your total cooking time to account for carry over cooking.
    • If the oil is so hot that it is rolling smoke that means it’s burning and needs to be discarded.
    • There should be no sign of raw pink chicken in the middle of the breast.

    Thank you so much for this. This is one of the first cooking videos I've seen that is ACTUALLY good for beginners, and it felt very comforting having every single thing that I felt confused about clearly explained to me. A lot of people seem to take cooking knowledge for granted, so they don't even bother teaching about the basics like which oil and pan to use. So thank you :)

      As a white American I can say that when my mom and I cook chicken we generally cook it on high for 4 minutes then flip it over and cook for 3-4 minutes again. Don't worry about the oven, haha.

    Great advise, thank you. I fry my chicken the same way but in a non stick pan. I am older and the iron pan is too heavy for me. I just brown the chicken as you did, on slightly higher than med. heat, then place a lid over it and turn the temperature to low, bake it this way for about 10-15 minutes, depending on chicken breast size. It's so nice and juicy and saves electricity.

      Oh! That's a good idea. I have to make more than 2 breasts and my pan handle won't fit in the oven! Plus, we po'. We can only afford the non-natural huge chicken breasts! So I need a bigger pan! 🤣

      I too have trouble with heavy pans. Rather than Le Creuset, try Emile Henry (baking dishes, Dutch ovens, pots, non-cookware items as well). Much lighter in weight, cook beautifully, and clean up is a dream!

    Bravo! Just Wow!!! This is by far the best and most informative (not to mention easy to follow) tutorial on chicken breasts I’ve seen.     I used a cast -iron pan, olive oil, same size chicken breasts as the demonstration. Do EXACTLY what he says, start to finish, and it will come out perfect. I use the word perfect because there isn’t a better word. Absolute keeper.

    Just made this for dinner and it turned out juicy and delicious, topped over pasta with cherry tomatoes and my husband and I loved it.     Made this tonight, delicious! The jus adds some nice flavors too. Having some references for timing pan and in oven was nice, didn't have to change much for the recommended size of chicken breasts but I still temped the chicken while resting to be sure. It started resting at around 163-165F and then some carry over cooking.

    I cooked chicken for the first time today. I watched this video after I finished and was amazed I somehow did most of things right. I winged it but it would've been safer to watch a tutorial first. My chicken was a lil crispy on the outside but white, juicy, and tender under that crisp layer. I loooved it and so did my dad. I'll definitely try out that sauce you made next time.

    Hi Chef. Great recipe. I understand the purpose of resting the chicken, chop, steak, etc but my hubby complains that the meat is only warm and not hot. I tent with foil but it doesn't really help it stay that warm. Any suggestions? Thank you.😎🌵

      Get some spices: aside from salt and pepper, also get some garlic powder, onion powder, thyme, smoked paprika, and cayenne to start with.

    Pan searing needs an oven??? We don’t have ovens - flatten it to cook through ;) save some energy.

    Tried it. Killed it! I am not a cook by any means. So I came to UA-cam tryin to find an easy but good fried chicken recipe. I found it here. I did not make the pan sauce due to lack of fresh ingredients however even using the seasonings this turned out amazing. Thanks for a great meal!
